Smoked pork shanks:
Pork legs - four pieces;
Carrots - four pieces;
Onions - four pieces;
Ginger - 60 g;
Garlic-1 head;
Bodian - three stars;
Rosemary - three sprigs;
Thyme - one bunch;
Red basil - one bunch;
Water - 5 l;
Dark beer - 5 l.
We prepare a broth from carrots, onions, ginger, elderberry, rosemary, garlic, fresh herbs, water and dark beer. Cook the pork shanks in this broth over medium heat for 90 minutes. Dry the meat with napkins and smoke it on fruit sawdust using the cold smoking method for at least 12 hours.
Galushki (steamed buns):
Flour - 360 g;
Baking powder - one teaspoon;
Dry yeast - one teaspoon;
Sugar - 35 g;
Vegetable oil (olive) - 35 g;
Warm water - 180 ml;
Milk - 20 ml.
Salt-1 pinch.
We mix all the components and send to a warm place for 90 minutes. After that, we knead the dough again and roll it out. The height of the dough should be a maximum of 1 cm. Cut out circles, grease with vegetable oil and fold in half. We cook the buns in a steam bath under the lid for 12 minutes.
