Excellent video I really enjoyed it. If I may a couple of questions. What would be interesting is to see what you are looking for in the burr during the initial sharpening. I know there is a burr before you can feel it. Do you see something that indicates a burr before you can feel it? I noticed you sharpened at 15° and honed at 16.5°. How much difference does this make in the final BESS number as opposed to hand holding as shown in the Tormek training videos? Also what increase in sharpness do you see with the final work on the paddle strop? One final question. Have you tried using a paper wheel during the final stages? Again thank you.
@sharpcokorea
@sharpcokorea 5 жыл бұрын
Thank you John. 1)I check the burr with naked eyes and light. 2) My freehand honing technique on the Tormek leather wheel is terrible. I think I can't get under 150 BESS. 3) I believe final finish is should be done with hands. So I used the paddle strop at that time, and now I use the nanocloth ultra. It lowers BESS score by 20~30. 4) Paper wheel? Yes, I used 10" slotted wheel only. But not anymore. I like the Tormek leather wheel much more.

I use 15 degrees on my kitchen knives, using a tormek grit wheel and I polish and hone on a rotary buffing machine, not a prosaic but mighty sharp and it produces a slightly convex edge rather than concave hollow grind, this makes for a robust stay sharp knife for daily use. Not pretty but practical

These diamond stones, say absolutely do not use water or warranty is void?

It's CBN wheel. Yes, the warranty is void when use with water. But if you are careful, you can avoid the problem. Be careful not to rust.

Im wondering if it is absolutely necessary to have a diamond 1000 grit stone to achieve these sharpness levels? I have gotten good results with the stone that is provided, but i need to "true" it every so often. does a diamond wheel eliminate that? and does it achieve a sharper more clean edge? thank you
@sharpcokorea
@sharpcokorea 4 жыл бұрын
You can get similar score with SG-250. But if your knife is very hard steel like CPM-S110V, you should hone it with diamond or CBN abrasive. Tormek PA-70 wouldn't work. Diamond or CBN wheel is good, but I don't think it's necessary.

@theORIGINALtonasco

Fine, careful work. But, in my humble opinion, when grinding and honing you dwell 'way too long in one spot - both at the beginning and end of the pass over the wheels. You are removing more metal at those two spots than the rest of the length of the blade.
@sharpcokorea
@sharpcokorea 5 жыл бұрын
You're right. But the honing paste is average 3 micron and Tormek runs at about 120 RPM. So I think that not a big problem.

다이어몬드휠 대신 CBN을 사용하시는 이유가 궁금합니다.
@sharpcokorea
@sharpcokorea 4 жыл бұрын
