This is great professionalism, but it's also because they're super experienced session musicians (hint in their project name =). I'm really not sure if it was recorded live, probably tracked (the lag would wreak havoc on rhythm). I'm almost sure they had a metronome in their ears either way to keep tempo (like in any session recording). What I mean is, if they were on one stage with good monitoring, they really could have played without a metronome and make it even more alive (fluctuating a bit). They made the absolute best of playing remotely.

Fun fact! The bongocero is Mataro Misawa, who you may also recognize from his work in Super Mario Odyssey! He's the guy that did all the super funky percussion stuff for the Forgotten Isle.
