HOW TO COOK TAPIOCA PEARLS
These black tapioca balls are soft, chewy, and fragrant. They are commonly added to Bubble Tea or Milk Teas. Others call them BOBA or BLACK PEARLS.
Why they are black? They are black or darkened in color due to the dark brown sugar and food coloring added to pearls.
And it is aesthetically pleasing to the eyes when added to the neutral color of the milk tea.

Ingredients
7 C water
1 C uncooked tapioca pearls
3 T brown sugar
2 T water drained from the tapioca pearls
1. Bring to boil 7 cups of water over medium high heat. The ratio of tapioca pearls to water is 1:7.
2. When the water is vigorously boiling, lower the heat to medium. Add the pearls, stir and cover.
3. Cook the pearls for 20 minutes. Stir occasionally.
4. After 20 minutes, turn off the heat and let it stand for 30 minutes.
5. Drain and save 2 T of the boiled water.
6. In a sauce pan, combine tapioca pearls, sugar and water. Heat until sugar dissolves.
7. Transfer to a bowl.
