I love you! I remember these. My grandmother used to make these. She came here from Puglia around 1920....I love your show. I see so many wonderful foods we used to enjoy and have been lost so quickly.

My grandmother made them with fennel seeds, i haven't had taralli in 25 or plus years. I also am going to have to make the eggplant parmesan with Nonnas batter recipe & the mortadella. U could also use slice pepperoni or even sliced meatballs.You & Nonna remind me of all the time I spent in the kitchen with my own grandmother. ❤❤❤

We're Barese. My Nonna made these too. At Easter, she put a whole egg on the dough. I.e., it would come out similar to a hard boiled egg. Peel the shell, and eat, etc.

The written instructions don’t indicate cover with a warm towel . So if someone failed to watch the video and didn’t cover , due to inexperience , what would occur other than drying of the tops of the individual shaped pieces of dough? Would it also fail to rise or rise as much ? Thank you. Again I love the cookbook by you and your very own Nonna

+Rossella's Cooking with Nonna Could not find the fresh yeast anywhere near me (Las Vegas, NV) so I found the conversation of active dry yeast to be at 4 1/2 tsps. I'm going to attempt these today...wish me luck! :-)

My mother makes these and they're delicious. May I ask why your nonna put the salt in together with the yeast? Yeast and salt together is always a no, mum always puts her salt in the flour. They look wonderful though, thank you

It may be a no no, but Nonna has been putting it in with the yeast for years and she makes the best Taralli!! Lol I can't explain it

Adding salt to yeast is usually a no no because it can slow down the rising, but it doesn't kill it u less there's too much. Since these don't need to rise very much the salt and yeast are ok going in together. Like I said, Nonna has been doing this for years! :)

these are not "taralli baresi". Taralli baresi are smaller. those so big are with eggs and sugar. They eat on Easter.

moondespace no, there are different types of Taralli. These are Taralli from Mola di Bari. The ones you described are called taralli con le uova and are glazed with sugar and eaten for Easter. I also have a video for those, but these are absolutely taralli baresi

Rossella's Cooking with Nonna it seems there are different types of taralli, but this big one are so uncommon now. There are 2 mayor types now: taralli baresi and "scaldatelli" or "scaldatelle", always from Puglia but from Foggia/Cerignola, this one are bigger and i think there is more oil (and there is the fennel seed), taralli baresi are smaller. So moondespace was right too :) Anyway great job!

Funny enough, both sides of my family are from Mola and my nonna makes small Taralli that are almost tear drop shaped, made with olive oil and white wine, around Christmas time. I was only introduced to the kind of Taralli in this video when I met my girlfriend who’s parents are both from Napoli. Weird.

What brought me to this video was to watch and learn from Nonna. Poor Nonna, kept getting cut off. Especially when it looked like she wanted to take the reins. Sorry Rosella maybe next time, you should just let Nonna take the lead.

That sounds a little odd to me putting the dough through the machine 20 times that means you'll be in the kitchen the whole day never heard of that before and no sugar at least a little bit of sugar that dough must taste very Bland
