I'm sure you know this by now but yours was underproofed. It looked like it would have been as good as Tartine's if you had increased the length of your proofing time. A longer bulk usually solves problems like this.

I took your tartine bread video and made the dough...then I followed another video for baking baguettes (water pan etc.)...turned out really well.

Wow that's great! I've been on a real baguette kick lately at home. Making them almost every week haha. I know that Tartine also has a slightly different baguette recipe too in their book. I'd love to show it sometime as well.

@@GrantBakes that would be a good video. I have no tools so I made a baguette form out of cardboard and then put a floured tea towel on top.

They dont quite use that same recipe anymore. They now use flour from cairn spring mills. This makes a very different product. It is detailed in thier audiobook

Tartine Bread uses, something like,Central Milling Co. High Mountain High Gluten Flour, where as in your earlier video, you were using Pillsbury Bread Flour. There's some difference from the git go, but you did good, all things considered.

Yep. My go to these days is King Arthur bread flour and while wheat flour when I can get it. I've never used Central Milling but I bet it's great.
