Ingredients:
1 lb (453 g) stew beef
1 large eggplant
1 small onion
4 small carrots
2 tbsp oil
5 dried prunes
1 medium (or 2 small) tomatoes
1 medium potato
Mixture: 1 tbsp tomato paste, 1/2 tsp turmeric, 1/2 tsp cinnamon, 1/4 tsp ground chili pepper, 1/4 cup boiling water, salt
Directions:
1-Cut the stew beef into bite-sized pieces and set aside.
2-Peel and slice the eggplant, onion, carrots, and potato into circular pieces.
3-In a large pot, heat the oil over medium heat.
4-Add the onion as the first layer.
5-Layer the beef over the onions, followed by the carrots, eggplant, and dried prunes on top.
6-Pour in the boiling water, ensuring all ingredients are covered.
7-Reduce the heat to low, cover the pot, and simmer for about 30 minutes.
8-In a small bowl, mix the tomato paste, turmeric, cinnamon, ground chilli pepper, and salt.
9-Add the tomato paste mixture to the pot and cook for an additional 5 minutes.
10-Add the potatoes and tomatoes and cook for another 10 minutes, or until the meat and vegetables are tender.
11-Adjust seasoning to taste and serve hot.
