The work needed to output a deck tech is bigger than a regular gameplay, and the viewership is usually smaller, that's one of the reasons we mainly focus on gameplay, these days.

Why is removing AN an automatic lose? Why do we build a 100 card deck built around 1 card as the only win con? I'm equally frustrated ans confused.

Because that is how that deck was specifically built, and it was one of the fastest and consistent decks around in the past half year. Having more wincons, or slots dedicated to it, would hinder the deck's consistency. At the top "tiers" of cEDH most people try to build their decks as consistent and slot efficient as possible, and most of the times that means having only 1 wincon, or none at all. :)

We actually have most of our games not ending that way, as we avoid picking up lists that only win that way. So if you watch some more videos you'll find out other interesting wincons we try to showcase :)

No Koma just stops activated abilities. Korvold draw is a triggered ability

They would, but in a cEDH environment Fog is most of the time a dead card, therefore not commonly used. If your meta however is full of combat-based-combos/finishers, then you could look into Fog or similar Fog effects :)
