Very Berry Cake Filling

2 cup (10oz) fresh or frozen berries
1/2 cup sugar
1.5 tbsp cornstarch
2 tbsp water
1 medium lemon zest
1.5 tsp lemon juice
Vanilla Cake
-------------
• 1.5 cups all-purpose flour
• 1 cup sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp white vinegar
• 5 tbsp unflavored oil
• 1.5 tsp vanilla extract
• 1 cup water
Chantilly Cream Frosting
-------------------------
1 +1/4 cups chilled heavy whipping cream
1 cup powdered sugar
1 tsp vanilla extract
4 oz (113g) cream cheese softened
4 oz (113 g) mascarpone softened at room temperature
Gel food color
