I need to do another Bochet. I have been doing a hybrid testing by only cooking part of the honey sometimes different types. Its adding extra taste to my various brews. Originally started this to help keep residual sweetness which seems to even dryer end. 6 years is a long time. About 3 years seems to be peak results. Side note, first comment sweet.

Note to self: make a bochet. … No free fermentation vessels at the moment. Darn. LOL
