Love the videos, one note though that I think made this one skewed is the timing of the infusions was ~22 seconds on the first and ~37 seconds for the second, which is almost double the infusion time. Axel mentioned that the second had more flavor and the first was flatter, which I think the extra 15ish seconds of infusions definitely contributed to. While I'm sure the high quality one is still noticeably different, this definitely skews it. I think something that would be super interesting to do, would be to take the same tea with someone and do different infusion times or temperatures and try to have them guess the difference. Maybe have it be another "high vs medium quality" showcase, but in reality they are both medium quality just brewed differently, or something similar. Would showcase the impact of how the infusions themselves affect flavor!

I love watching these videos, as i am sipping my own tea, enjoying a nice purple sheng pu'er from fujian myself, i don't know the cultivar sadly, i know its from 2017 but it was a gift in plain packaging from my teacher so that is what i know about it. 1 year ago i was just like Axel a complete noobie to tea, now i have loads of it, from my trip to taiwan to my local shop that i found now after moving to "the big city" aka Bergen. the closest i could get to true tea in my small home town was some pretty grimey gunpowder from an asian grocery store.

Good! I must say that I always follow your videos and it was very useful the video where you describe how to brew chinese tea in a gong fu Cha tea set so that I bought a chinese gong fu cha tea set and I enjoy drinking oloong tea!

I am new for drinking loose tea. I have a Dong ding oolong (shan wai shan tea)... i need to know perfect temp. What is the taste? I am new to gaiwan use as well... i am so confused. I do not have a gonfu set which I desire but i bought the gaiwan and want the best of it.

Watch our Gaiwan videos to get more information. The temperature for Dong Ding is usually close to boiling around 95-98 degrees celsius which is 205-210F. Taste depends on the level of roasting but it should be balanced with fruits and nuttiness.

Don, why is there no warning sign on your website saying how rushy and tea drunk one gets from this tasty treasure. It is many times more intense than Jade Star (at least for me). What magic did you cast over this tea or is it just my weird body 😅

hi sir.. i was able to find a sealed never opened Dong Ding Oolong Tea.. This expired 2018/5/02. Will this still be nice to drink ? its stored in our storage place.. cool and dry... thanks!

It’ll still be completely drinkable. Although it may have lost some of its flavour. Lightly roasted oolong should be kept in the fridge and drank in a reasonable period of time. Although if it’s a heavier roasted oolong it may keep for longer, before it too, will inevitably lose some of its flavour.

I've never had them side-by-side, but I find Dong Ding, Tie Guan Yin and "milk oolong" very similar.

I find the Chinese languages to be fascinating. However, I must be honest that their words can be a bit awkward for me to hear and pronounce. I'm just glad this tea isn't called 'Ding Dong' tea!
