Quinoa is a universal base for salads. Such salad comes out nourishing and delicious and quinoa adds a special nut taste while a dressing gives additional aromas and what is more, it is easy cooked.
Ingredients:
• quinoa - 100 g
• water - 250 ml
• fresh cucumber - 200 g
• tomatoes - 200 g
• bell pepper - 100 g
• red onion - 50 g
• garlic - 1 clove
• fresh parsley - 10 g
• olive oil - 2 tbsp
• honey - 1 tbsp
• lemon juice - 2 tbsp
• ground black pepper - ½ tsp
• salt - 1 tsp
You will need:
• carving board
• saucepan
• 2 bowls
Preparation:
1. Rinse the quinoa in cold water for several times. Bring 250 ml of water to a boil in a saucepan, add the quinoa and ¼ tsp of salt, reduce the heat to low and cook with the lid covered for 15 minutes. If in 15 minutes there is still water left, leave over the heat for 2-3 minutes more. Take off from the heat and cool.
2. In a small bowl combine the minced garlic clove, olive oil, lemon juice, honey, black pepper and ½ tsp of salt.
3. Dice the cucumber, tomatoes and bell pepper. Chop up the red onion and fresh parsley.
4. Add the vegetables, greens and quinoa into a salad bowl, pour with the dressing and toss.
5. Serve as a salad or side dish for meat or fish and as a filling for sandwiches, rolls and canapés. It is perfect as a side dish for steak.
