FAQ: Why use unsalted butter and add salt at the end? Can't you use salted butter?
You can, but you risk an overly salty buttercream in the end. Salt varies by brand but you probably also have a preference for how much you like in your dessert.
If you do do choose to use salted butter, try only half - I've had bakers tell me that they used all salted butter for their buttercreams and it ended up being way too salty

@@RedMoonsEcho There's a lot of different ways to make frosting and I grew up baking but until recently, I had no idea how to make any of it. I only learnt how to at 18 despite baking and decorating cakes since I was probably 6 or 7. My mom always had to make it for me. I've always done the crisco/butter and powdered sugar method though. There's a lot more to it than just those 2 things but those are the main things.

Condensed milk is made with milk and sugar, you can make your own, it's so much better. 2cups milk, 2/3 cup sugar, cook on medium low, for 30 to 45 mins ,stir to keep from bottom burning. Pour into jar or bowl let cool, cover with lid or plastic, put in fridge for 1 hour. It makes 1 cup, Then enjoy🥰

Is it as sweet as the can? I’m a cake decorator and I’ve never made this type of frosting. So is the frosting the “hurt your teeth” type?

*1 1/2 cups unsalted butter *1 cup sweetened condensed milk *1 tsp salt *1/4 tsp vanilla extract This is the same recipe that I use. You can also add different flavors, such as someone suggested peanut butter. I’ve made it with cherry extract also. Very good, easy to work with frosting.

I make my own condensed milk. I'm a diabetic, and was missing out on all the great recipes that call for it. I use fake sugar 1:1. Works just as well.

@@lizzyd8071 I have diabetes. Real sugar will kill me. I have been eem hospitalized twice for Ketoacidosis. I use Sucralose, also known as Splenda. It also can screw with my health, but my Endocrinologist and I worked together to find out how much I could have and not get sick. Also, Sweet and Low tastes like crap.

@@lizzyd8071 Sweet-n-low (which is a brand name for an Saccharin based sweetener) is not a 1-to-1 ratio artificial sweetener. If anything you would need double to be as sweet. And if they used anything aspartame based, or Stevia based, they would only use half the amount, since they are way sweeter than regular sugar. If I had to guess, they probably used Sucralose (brand named things like Splenda) since it's derived from cane sugar. edit: source: my family is full of diabetics who love sweets.

I make most all recipes using Splenda in place of sugar, you can make your own condensed milk using Splenda however diabetics need to realize if using Splenda Brown Sugar replacement, is it contains real sugar and molasses whereas Purecane Brown Sweetner found on Amazon measures equal to brown sugar and though made from cane sugar it's zero calories and bakes/cooks up well. For condensed milk Splenda works well just use less Splenda as it's sweeter than sugar.

Thanks for this and for all the comments! My brother is a type 1 diabetic and I'm so tired of seeing him miss out on birthday cakes, other than his own. I'm about to start making a tray of cupcakes or a mini cake for him at all of our parties!

@@cherylanderson3340 it’s because purple and yellow are complementary colors, so they cancel one another out. It’s the same reason people who dye their hair blonde use purple shampoo - it cancels out the yellowiness so their hair is more of a white blonde

@@Kimmie9553 Thanks for the reply. It reminded me that many decades ago, most people had white bedding & men wore strictly white shirts with suits & ties. They used to sell bluing or blueing to add to a white load to make whites whiter! (I'm not sure how it's spelled.)

If you've ever heard older ladies referred to as "blue hairs" or even "the Blue Haired Mafia" (where I grew up, they RAN the neighborhood), it's because they use a few drops of Mrs Stewart's Laundry Bluing in their last rinse water to make their white hair look brighter and whiter.

Made this on accident the other day when I realized I didn’t have powdered sugar and added condensed milk, deigning to at least make a glaze for the cake I made. Lo and behold it whipped up beautifully and became the icing of my dreams. It was half butter half cream cheese, which added a nice tanginess.

My granny used to make cakes in my hometown in southeastern KY. She used Crisco to make her icing. I like seeing all the different ways to make it. 😊

My grandpa owned a bakery, and then a diner. He was an amazing Baker who came from Italy in his mid-20's . Yes, that was the way all butter creams were made if they had to stand up to the temperatures because there wasn't air conditioning back then. So, I'm here to tell you that I'm in my early 70's now & that was the best buttercream I ever tasted bar none.🤗🍰

I love Russian Buttercream! I make it all the time. (It is NOT a stiff frosting, so you can’t decorate w/ it.) I add peanut butter, and it makes phenomenal peanut butter frosting for my dark chocolate cupcakes. Yum

Because it is made with butter ....couldn't you stiffen it up in the fridge so that decorating is possible with it????

@@rosyc7094 that’s not the reason. Buttercream is a 2:1 ratio of butter and confectioner sugar. Russian buttercream is made with sweetened condensed milk. It’s a softer buttercream bc of the condensed milk. There are 7 different types of buttercreams, and each buttercream serve a specific purpose for a specific outcome. Traditional or American work best for decorating tips.

sweetened condensed milk is basically milk and sugar so if you’re making it to avoid sugar you’re not really! If it’s for convenience sake well yay 🎉

Definitely convenient! I hate keeping powdered sugar around because I very rarely have a need for it and, yet, when I want to make a cake it's usually on impulse. I definitely wouldn't mind keeping a can or two of condensed milk in my pantry for this purpose. Now I want to try it!

I just made an oat flour cake with a honey syrup and raspberry filling. Instead of Swiss meringue I used this buttercream and it was delicious!! Thank you!

Thank you for the recipe! I tried a similar Russian buttercream last year. And although the results turned out well, it took both forever to balance the right temps for the butter and condensed milk. @@perlabuendia88 Not at all Melt 4oz unsweetened chocolate in a pan. Add 2 cans sweet and condensed milk and cook until THICK I mean THICK. Allow that to cool down fully. Your going to whip your butter just like seen in the video here. When it's nice and white, add the cooled chocolate milk mixture and continue just like shown in the video. It is delish!! This recipe is 1 pound butter 2 cans milk 4oz unsweetened chocolate You can break down into half if needed If for some reason it's not stiff enough and you need to add a little powdered sugar, you can. This is a pretty forgiving recipe and easy to fix or adjust.

Not too sure where that is located currently. There's another in Texas I get her bad credit stuff pop up on mine occasionally. Thankfully iv never lived or own property in Texas and that's easier to sort out. I'm originally from Minnesota and married and moved into the Chicago area.

@@judichristopher4604 You add cocoa powder. The first recipe I used had far too much cocoa powder, so much that I needed to add more condensed milk to eliminate the bitterness. It needs really only a quarter cup.

Thank you so much for sharing! I can't do overly sweet frostings like American buttercream (something to do with the sickeningly sweet 2lbs of powdered sugar to 1lb of butter) or cream cheese. I love meringue based buttercreams but they take forever to emulsify if you lack a stand mixer. This is the easiest frosting recipe I've ever seen and I have to try it. I have a Russian friend who's friends with a pastry chef and she gave me a slice of this amazing cherries & cream cake. I couldn't pinpoint the frosting & she didn't know what it was either. Not too sweet and super creamy like whipped cream, but still maintained the stability of a buttercream and totally pipeable. I wonder if that's what it was because I need to know. It was so good. Time to pick up some ingredients! ♥︎

Never seen this before and as stated in a previous comment I had hunted various recipes of butter creams for my son’s Batcave cake. The one I ended up going with was the cream cheese buttercream and close behind was an Italian buttercream using hot sugar syrup and egg whites. As a quick buttercream this looks awesome! Thanks.

I have a pound cake recipe that I basically do the same thing with the butter. But I use parkay and it does the same thing changing color like that. My grandfather taught me how to make it. He was a tugboat captain many many moons ago. I am 63. When he gave me the recipe he said go home and make it. I did and told him it wasn’t anything like his and he laughed and said ok now we will make it together. It’s all in putting it together and the time to do it in. It is his recipe. Everyone loves it and are very excited when I make it. It takes about 45 minutes just to mix it up.

Another type of frosting for you to try: Chocolate instant pudding and heavy whipping cream. Follow directions on box, mix in mixer like you would whipped cream.

A few tips for this: To get a more white color, you can use a bit of purple food coloring If you want, you can skip adding salt by using salted butter at the beginning Make sure to keep this out of warm places, or it will melt(because of the butter in this)

My mother used rose water instead of vanilla! So, very good!

I found It!!!! I remember my grandma and aunties making this- it was in Mexico, I haven’t seen it here in the US… and it’s been so long, since I had it - I have asked so many people If they had this: or if they new the recipe but everyone kinda looked at me like I was off. I’m like “my grandma would make her frostings and glazes with condensed milk- have you had it?” The answer was: “uhhhh glaze yea frosting no”, and I kinda gave up. the glaze I was able to replicate, condensed milk and lime/lemon but I couldn’t figure out the frosting 🧁- I was doing’s condensed milk and powder sugar-- nooooooooo lol- butter that’s what I was missing duh 🙄. It makes more sense now. She would use this frosting for pan de rancho- or the glaze soooo yummy!!! She also used it for roll cakes.

my issue is always never having powdered sugar in the house! I've made my own by running granulated sugar through a coffee grinder, but it can still be a tiny bit gritty, which in some instances is not a bad thing, but if you want a smooth creamy buttercream, then it's an issue. using sweetened condensed milk solves the whole problem. this is genius. hats off to the Russians on this one!

I'm going to use sweetened coconut milk and into the whipped butter and see what I come up with. I'll let you know. I think it will work. The consistency of the coconut milk is about the same as the sweetened condensed milk. I will ice my drunken pineapple upside down cake made with moonshine pineapple chunks drained from the pinacolada moonshine, that I bought at my local liquor store. Think it will work? I can't wait to try it.
