When you use this recipe do you use the grams or cup measurements? I already asked one question today about the amount of flour. Just waiting for a reply but not long after leaving that comment I took a look at the ingredient amounts that were listed on the video. I noticed a couple of things. I know brown sugar is going to weight a little bit more than reg sugar but the amounts called for it in grams is a lot higher than what I would have expected. Another thing I noticed had to do with the eggs. This calls for 4 LG whole eggs (plus the 2 tbsp of egg yolks, of course). I learned this from another Pro baker. She said 1 LG egg is roughly 60 grams total. 30 grams of yolk, 30 of whites. When you calculate those figures the total gram weight should be 240 but the recipe called for A LOT more than that (can't remember off hand). I really want to make her chocolate sheet cake but now I'm not sure which measurements to use. I now bake using a scale so I can be more precise but those amounts are really throwing me for a loop, lol. Sorry for the novel. Just wanted to give you enough info prior to answering my questions. I made this cake using Cakeculator, followed everything precisely, it was a delicious, moist cake! Sour cream & good cocoa powder is very important. However maybe it's just me, but I find the cake a tad too sweet, (been cutting out sugar from my diet) so next time I bake this chocolate cake I will reduce the sugar OR will use a sugar substitute like monk fruit sweetener. I know the sugar also helps with the moist, soft texture but I want to eat all my cake lol and it need to be less sweet 😊 Thank you for all that you do!!

I've just made this today. I'm in the UK so substituted the canola oil with olive oil and the sour cream with double cream and it is delicious. The most moist (sorry, I hate that word) sponge I've ever made. I used it for bento cakes with SMB. I'll definitely be trying your other recipes out. Thank you so much for sharing ❤

I think it should work - some chocolate chips taste better than others, so choose one you really like the flavor of, along with the cocoa powder. That will influence the intensity of chocolate flavor in your cake ;)

I don't have a 18x13 sheet pan but I do have a 17x11 cookie sheet. I know not to use all of the batter and to lower my bake time by a few minutes but that's not the problem I'm having. I stopped the video at the point where you showed the list of ingredients. I was taken aback by how many grams = your 1 1/4 cups of flour. I've seen a 1 cup flour measurement go anywhere between 100gr to 150gr but yours seems to be *much* higher. I like to weight my ingredients so I can be as precise as possible. Is that gram weight for the flour correct? Please reply as soon as possible as 8d like to make your cake this week. Thanks in advance...

Any kind of oil will work. The stronger the flavor, like olive, might impart an olive oil flavor in the chocolate cake, but I actually think that sounds really tasty :)

You'll roughly need to double. My pan is only 40cm by 27cm = 1080cm squared, so you may need to 2.25X my recipe to get the same depth of cake. 😀

Is the cakeculator ratios still accurate? I tried checking the 9x13 recipe and the amount of flour, water, egg, etc. doesn't seem right when compared to the ingredients in a half sheet pan. Shouldn't the 9x13 have lesser ingredients? Idk. I might be wrong tho. But this hinders me trying the recipe as I dont want to waste ingredients.

Thank you! So this particular chocolate cake rises slightly higher than my other flavors, at just under about an inch or so. The other flavors sit around 3/4" high. 🙂

You'll need chocolate to get the rich flavor of the cake - it adds a bit of fat as well, but yeah this cake will need both kinds of chocolate to work. :)

Ok here we go: my pan is approx 40x27 cm2 = 1080 cm2 your pan is approx 43 x 29 cm2 - 1287 cm2 ratio = 1287/1080 = 1.2 times meaning your pan is approx 20% bigger than mine. You can use the exact recipe, but will get a slight decrease in height. My chocolate cake rises a little higher than my other cakes, so this may be just fine for you. If you want to get the same exact height you see in my video, multiply my gram amounts by 1.2 to get the right amounts for you pan ;) Happy baking!

Hey Jazmin, this cake uses all-purpose flour - all my choco cakes do except for the chiffon. Usually my choco cakes need a bit more structure, which the all purpose provides. I think it will be alright although you may find the cake to be a tad more flimsy and or moist

You got this. You can use my cakeculator and select 2 dozen cupcakes, or you can use (mostly) any cake recipe that makes 2 dozen cupcakes. That should enough batter for your pan. Prepare it in the same way you see me do it here, line the bottom with parchment, grease/flour the sides. (If you plan on eating in the pan, just spray with nonstick cooking spray, no paper needed.) Baking time will be a little longer than my recipe video here, about 25 mins depending on your recipe. You can use a toothpick test. Let me know how it goes! Happy Birthday to your Mom!

You can, but just don't over the fill the pan. Check out the depth that I fill my pans and try not to exceed that. This size pan you should be able to get about 1 1/2 cakes. I'm not sure how you'll bake the half cake in that pan, so maybe just fill the pan you have and use the rest for cupcakes? These are pretty thin cakes so I imagine that a pan of your size should be done in 15-20 minutes. You'll have to watch the cake starting at around 12 minutes. Use a skewer to check if there is any uncooked batter right in the center. Good luck!

@@jhomcastro1119 Yes that should work as well. Just line the bottoms and sides with parchment paper. My cake recipes are adaptable to many pan sizes, so it should be fine. As far as baking time, will depend on the depth of your cake. I never bake 4” cakes, the smallest I do is 6” and then down to cupcakes. 6” still requires about 20-25 mins, so you’ll be a little under that. Just check your cake periodically. Good luck!

Hi! So I haven’t added dimensions for a 9x13 pan for my Cakeculator... esp if you’re looking for a full depth “sheet cake”, which is what most ppl use a 9x13 pan for. Dividing the batter in two will def give you a thinner cake prob less than an inch high in your pan, is that what you’re looking for?

Hello, how much sugar can I reduce (I'd like to reduce as much as possible)? Will it affect the way the cake rise?

You know, I've never tried to reduce the sugar - sugar adds sweetness and a soft texture mostly, but I can't say for sure how much will impact rise. Whenever I alter recipes though, I don't go 10% more or less in either direction unless I know the outcome, but you should just experiment based on your tastes :)

Mine ripped in half when taking it out of the pan because I had to line the pan with two separate sheets of parchment paper 😞

It's a half sheet pan, so it's pretty wide, but it's also very thin. It easily serves 10 adults when I make a letter cake out of it. 😀

It's so annoying that u dun link the recipe in the description. The whole point of me clicking on a video is so that I can look at the full ingredients list without going to another website smh
