Thank you for explaining so clearly how much fondant is required. Most other sites just give you a calculator. I like to know how numbers are arrived at, and yours has been the best explanation.

This gotta be one of the best cake-making channel on youtube. I came accross this video looking for an answer where i and my wife gone wrong when we first try making a fondant-coated cake. Thank you for this excellent tutorial. You are an amazing instructor. Your weight calculations made my head spin, but I will watch it again and figure it out. QUESTION: When using darker coloured fondant, the corn starch is visible on the cake. Many people say to steam it lightly to melt the starch into the fondant. But you seem to be very concerned about condensation and moisture on the fondant, so it seems like I shouldn’t be using steam. I am at a loss on how to get rid of the corn starch streaks without steam. What do you recommend? Thank you!

Some questions stay still problematic for me: how to manage time and schedule of the all process, when to start before the event day? How to manage the freshness, in or out of the fridge, especially at the final process when the cake is covered with the sugar paste?
