She was moving around more in the SNL performance, that has an effect on vocals. (just try singing a song and walking through the room, you'll notice the difference, even with this slow movement, unless you trained yourself to be able to do it) Also, even though she is a seasoned pro, I think SNL a different beast than a performance for a kind of selected audience and she might have been a bit more nervous, which also affects the voice.

in SNL performance her voice sounds little dry, probably she didn't drink that much that day and this dry sound making effect that some of her notes sounded slightly flat, but they weren't actually, also the style she chose to sing in that performance, she used a lot distortion in that performance and not hydrate voice + a lot distortion in a song means it can't sound that good. She still was good, but it could've been better. She was also probably nervous, at the begin you can see it. In this performance she was absolutely relaxed and perfectly rested in good vocal form.

She has always said that the main focus of the songs is the lyrics and music, not the person she wrote it about. While yes I do agree that she should say something about the swiftie who keep harassing him, It’s ultimately not her fault. For all we know, this song could also be written about so rone else, or even a fictional character, and fans have just misunderstood it.
