My mother was Belgian with family in just about every neighboring country, and since my father was career military we spent as much time as possible living in Europe 55 years ago. This is how I grew up. Preparation was just as important as the food we ate. - Thank you. Now at 72 I'm even more 'home sick'.

Ohh what a lovely village, those apples are just heavenly. Love how everyone comes together to help,enjoy and share the harvest ,as well as use the common barn oven. It’s wonderful this old tradition has survived and will be passed on to the children. The community feeling is also just beautiful. Cheers to this family for continuing on.

Excellent video....reminded me that somewhere still people working together at other than making money....but at making each other happy....Mi child hood was a bit like that...in the mountains of NW Spain....no tractors....the cows did everything....but the only juice that was stored....was the juice fm the grapes.....The Wine!!

I live in Salt Lake, planted a Fuji, or red Fuji almost twenty years ago. It also usually bears heavily one year, then nothing the next. I just wish I’d planted a standard, or larger tree, these semi dwarfs are very restrained in their growth.

In the Hunsrueck we combine carrots and potatoes with spices as listed in the recipe, but do not include ginger. We also usually have some kind of sausage with it.

We have a similar dish called a applesauce custard. Eggs, cinnamon, brown sugar, applesauce blend then refrigerate until nice and thick

How lovely , my family is almost completely Germanic and yet I’ve never known any of the traditions of my family origins, due to American aversion to identifying as German during the Hitler regime. I can’t tell you what pleasure and regret I felt seeing what a traditional German family life is like. It explains so much of why I love to cook and bake and especially with apples. We call the Bergische Land also the German Rainforest. There are a lots of forests and every 4 to 5 days rain is falling. When we moved away from there I missed after a few days the noise of rain falling. Walking from one village to the other through the forest and those pretty houses. Yes it was so beautiful living in Germany.

The majority of Germans don't live this way unfortunately. Germany is pretty crowded, so many have to live in small apartments, not only in the cities but in the country as well. I live in a village but it's not "village-like" but rather some sort of suburbia of the next city. These small family farms are gems, time capsules that need to be saved.

That cream is essentially a custard with apple juice instead of milk/cream. The capacity of eggs to bind apple juice into a "cream" should not be different from their capacity to bind milk. So just use a custard recipe as a guide for the amount of juice and the number of eggs. The techniques to make custard would apply to that cream, too and provided you don't screw up and curdle the eggs, the worst that can happen is getting a cream that's thicker or more runny than you wanted it. You can adapt the next attempt adding (or leaving out) one of the eggs or some of the juice. As to the amount of sugar: That would depend on how sweetness and sourness are balanced in the juice. So some trial-and-error-tinkering would be required to figure out how much sugar you like with the juice available to you - which might be way more or way less than the women in the video used. And vanilla just add to taste. I don't think it needs to be vanilla powder - vanilla extract or the seeds scraped out of a pod would do the trick as well. Just use what you're familiar with and what's available to you.

The quality of the apple juice is important for the taste. In the recipe clear juice from regional, old apple varieties was used. 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: 40 g sugar 1 packet of vanilla pudding powder (37 g) 3 eggs 500 ml apple juice 1 cup of whipped cream 𝗣𝗿𝗲𝗽𝗮𝗿𝗮𝘁𝗶𝗼𝗻: Mix the sugar and the vanilla pudding powder in a bowl. Add 200 ml apple juice and mix well. In a second bowl whisk the eggs until foamy and place in a saucepan with the pudding mixture. Add 300 ml apple juice. Simmer at low temperature for approx. 20 minutes, stirring constantly until it's creamy. To serve, whip the cream until stiff and serve. You can substiture the vanilla pudding powder with some vanilla (extract, beans or whatever) and 35 gramms of starch. The recipies are in the description box tho.

Mary Therese McCool well just watch what they did. Our Americans in 1800s had similar recipes but used oranges instead and nutmegs & spices. I loved both versions of juices.. technically eggs is universal can b used with any juice.. spices and sweetness to taste.
