Can I just say that I love how you describe consistencies? It doesn’t go into my brain right when someone talks about consistencies in terms of how long it takes to sink back into the icing when you drizzle it, but when you say toothpaste or shampoo I know EXACTLY what you’re talking about ❤️❤️

I totally agree. The counting method never really worked for me, but hearing it compared to other products really helped it click for me. Glad it helps!

I honestly don’t understand the science. One of the reasons cratering happens is because the cookie sucks the moisture out from the icing and the holes helps prevent that.

I always thought you drizzled the icing on the spot to stop it from sinking or cratering, whatever it’s called, but now you make the dots? Poke the holes?

Either works! The poking holes is a newer method I’ve been testing out and it’s been successful too.

I do have a question: why do you make a squiggle on some places of your cookie before you flood it? Is it to increase the height of the cookie or just as a reminder of the color of the flood?

It helps prevent cratering, when the icing forms dents or holes as it dries. It’s only an issue in smaller sections.

I do not. I used to offer them, but I got orders so infrequently that my gluten free ingredients would expire between orders. It just didn’t make sense business-wise to keep offering it.

Is there a recipe to get the shampoo, consistency, and the toothpaste consistency? Or do we have to just keep testing till we get it right?

It’s hard because there isn’t a separate recipe for each consistency. You just add water or powdered sugar to your royal icing to thin it out or make it stiffer.

No, it’s a little different, royal icing has meringue powder. I have my recipe posted in my shorts, the quickest way to find it would probably be to search “south street cookies royal icing recipe” in the search bar.

I would wait about 15 or so minutes. I waited longer here just because I was working on 2 dozen cookies at once from this set and it took longer to get back around to the next step.

I like the white ones much better than the pink ones.. plus, for some reason, All i see is an elephant so it messed with my brain to see it pink lol
