That "recap" part was the most amazing/helpful part of the whole video because, everything just clicked. That's how I like to take my notes for organic chemistry, chemistry, bio, etc. Every TEDEd video should have that "recap" part.

Try putting a piece of paper flat on a table. Bring one edge to the opposite edge, it easily creates a cylinder because they are isometric as said in the video. But now try bringing that same edge to one of its adjacent edges without letting any surface of the paper coming off of the table. It's impossible because you would have to increase the density of the inside part of the curve on the paper, and decrease the density on the outside, changing the material.

You didn't mentioned the moment of inertia. Folding a pizza increases its moment of inertia making it more resistant to a bending moment.

I find, unless you're eating a gigantic slice of pizza, you can provide sufficient support using your thumb and/or other fingers to prop up the pizza along its length. This prevents cracking the crust or otherwise changing or damaging the topping of the pizza slice in any way.

For the mathematical formality: You can calculate the Weingarten map at any point on the 2D surface. Intuitively this is the matrix corresponding to the change in direction of the normal vector at every point in the surface. (Normal being the vector upwards perpendicular to the surface.) For instance, if your point is at the bottom of a "u"-shaped curve, and as you move to the right the normal vector will point backwards. The Weingarten map is a matrix. The eigenvalues of the matrix are the principal curvature with the direction of the curvature given by the eigenvectors. If you place your surface like a sheet of paper on a table and define the normal to be in the upwards direction, a principal curvature of > 0 means it curves like a "u", while a principal curvature of < 0 means it curves like a "n". So a potato chip will have principal curvatures of opposite signs, both nonzero, and a ball will have principal curvatures both of the same sign, both nonzero. The side of a cylinder will have one of its principal curvatures nonzero (as it curves around the circumference) and the other principal curvature zero (as it is flat going up the side of the cylinder). The determinant of the Weingarten map (ie the product of eigenvalues) is the Gaussian curvature. It turns out all surfaces isometric to a flat surface have Gaussian curvature 0. That's what you can curve a sheet of paper (both principal curvatures are 0) into the sides of a cylinder without stretching the paper, but you can't turn it into the surface of a ball or a potato chip. That's also why the pizza trick works.

That's not true. The reason this works has to do with geometric curvature.

The moment of inertia of the section of the pizza that lies on the radius of the curved line you are trying to bend the pizza into is greater if you fold the pizza slice. Double T shaped beams and pipes work the same way.

The last why disapointed me a bit, at first isometry is "what describe the property of a square sheet of paper to become a cylinder without strenching" and then it becomes what causes a form to have such a property. I felt a bit fooled there.

Ah i get it. Its like if you have a piece of paper with its face parallel to the ground, it's easy to bend the edges or vertices downward, because the resisting material is thin. However if the paper is perpendicular to the floor, it is hard (if not impossible) to bend an edge or vertex down without bending it like before, because the resisting material is "thick" when you change the direction of bending, you effectively change the length/width dimension, into the depth dimension. OR...^^^

Just so you know, isometric translates as iso = same, and metric = distance. That's what isometric means at a base level. HWWHY? Because the sheet is the same distance overall even when made into a cylinder, but is not the same distance when stretched or contorted into something else like a sphere.

I feel like the production on this is over the top. I get a bad vibe from it that would make it difficult to watch a longer segment, or multiple segments. That's what makes things like minute physics successful. They use very simple visuals that make it easy to digest the material presented.

my technique is eating the crust first, then moving down the pizza (with your fingertips spread out touching the pizza) that way by the time youve eaten the crust the pizza isnt too big and one hand is enough to hold whats letf. try it itll all make sense
