Julie Nygard has studied nutrition for more than 30 years. As she was leaving her career to write a book about nutrition, the health benefits of chocolate news broke. Highly skeptical, she investigated the topic and discovered that although the research looked encouraging, companies were misrepresenting the message by encouraging people to eat their sugar-heavy chocolate products. Julie's experience with
nutrition combined with the health benefits of chocolate news prompted her to write her first book, "The Chocolate Therapist: A User's Guide to the Extraordinary Health Benefits of Chocolate." She started speaking about nutrition and the health benefits of chocolate, educating people on what the research truly represented as well as how to follow it properly. In this TedX presentation, she covers how chocolate is made from bean to bar, why people must eat 70%+ dark chocolate, how to read labels, why chocolate is rich in antioxidants and why it's highly important to eat antioxidant-rich foods in a toxic world. Julie has a degree in psychology from the University of Colorado/Denver and a Nutrition Educator’s Certificate from Bauman College: Holistic Nutrition and Culinary Arts.
Julie Nygard has a degree in psychology from the University of Colorado in Denver as well as a Nutrition Educator’s Certificate from Bauman College of Holistic Nutrition and Culinary Arts in Boulder, Colorado. She studied nutrition for more than 25 years.
A quick review of the research revealed that large chocolate companies were already mismanaging the “health benefits of chocolate” message, convincing consumers that any dark chocolate is good for them. To help get the correct message out, she wrote, The Chocolate Therapist: A User’s Guide to the Extraordinary Health Benefits of Chocolate.
Her shop, The Chocolate Therapist, makes clean-ingredient chocolates using all-natural chocolate, fresh spices, locally roasted nuts and organic flavoring oils. Julie has made it her personal mission to educate the public about nutrition and the health benefits of chocolate, helping people understand how to include a little dark chocolate in a healthy eating program. I wish I never saw this. I never believed in love at first sight until she said she was 57 years old. She has the best hair I've ever seen on a woman over 50. She has great hair for a 20 year old.

Don't understand the disclaimer about the lack of evidence for her claims about dark chocolate. It has been known for years about these benefits!

People sometimes assume that it is the sugar in the chocolate that make children bounce off the wall and not the caffeine , to much caffeine can make it hard for people to relax , sleep and have various of other effects and side effects that can even include death in high enough doses. 3 percent caffeine may not sound like much but it adds up fast and even faster for children who have small undeveloped bodies and minds, people who don't drink caffeine often notice the caffeine rush much faster then people who are used to drinking coffee in large amounts and most doctors claim that stimulates are bad for your health increasing risks of heart attacks, strokes, and heart rhythm disorders (arrhythmias). stimulates including caffeine can cause the heart to beat faster and with greater force, both of which can raise blood pressure.

If you want 100% of the benefits and nothing else, just get 100% cacao powder and eat or drink that.

You should have 80% or higher cacao - just be aware, the bigger the number, the bitter it tastes

This woman has her information kinda wrong here. 1. Cocoa is roasted cacao beans. Once cacao is roasted the heat destroys almost all of the antioxidants. 2. Cacao is healthy, cocoa is not. 3. If you want all the benefits and nothing else, get 100% cacao powder and eat or drink that raw. 4. Most dark chocolate bars are made with cocoa and not cacao. This is the difference almost everyone seems to not understand.
