Tender coconut pudding
2 cop milk
1 tin condensed milk
3 tbs gelatine ( plain)
1 cup water
1/4 cup sugar
2 cup tender coconut water
2 cup medium size tender coconut pieces
Method
Boil milk , then add sugar and condensed milk, stir continuously
In a different pan add 1 cup water , then add 3 tbs gelatine stir until gelatine dissolves, meanwhile stir milk mixture, pour gelatine mixture to the milk mixture ( strain the gelatine before pour )milk mixture and gelatine mixture should be in same temperature .then keep the mixture to cool down, then crush tender coconut pieces in a mixer jar (there should be fine pieces ) mix coconut pieces with tender coconut water and then mix in milk mixture, refrigerate this overnight and serve
For caramelised nuts
200 g nuts
5 tbs sugar
1/4 tsp butter
In a nonstick pan add sugar once it turns light brown in colour add nuts , on low flame stir until you get brown colour nuts then , pour this to a bottom thick plate ( apply butter before you pour the mixture)once the caramel nuts cools down Crush this in a mixer jar , garnish the pudding with the caramelised nuts and serve
