Here is another favorite moose dinner from our kitchen. Home caught spot prawns and tender moose steak harvested this past fall.
Take note, good care of the meat during harvest makes a big difference on the plate later.

Tender Moose Steak and Home Caught Prawns Recipe
Ingredients:
3 or 4 Moose Steaks
½ Cup of Garlic Butter
Avocado Oil for frying steaks (VERY important it’s avocado oil)
4 Tablespoons of Pink Himalayan Coarse Salt
1.5 Tablespoons of Pink Himalayan Ground Salt
Pepper to taste
2 Russet Potatoes, washed
Fresh Prawns
2 Tablespoons of Butter
2 Tablespoons of chopped Garlic
Parsley for garnish
Instructions:
Pat your steaks dry and rub ALL sides with your coarse salt.
Put them in the refrigerator for 2 hours or if you have time overnight.
Preheat your oven to 425°F
Grab your washed potatoes and coat them with some oil and your ground (fine) salt.
Pierce with a knife and place in a baking dish.
Put them in the oven for about 50 minutes. (Depends on the size)
Remove your steaks from the fridge and gently pat them dry. (Almost all the salt will have dissolved)
Heat your cast iron pan on high and add your avocado oil. (It’s VERY important to use avocado oil as it has a higher burn point. Olive oil and butter will burn!)
Place your steaks in your HOT pan and turn the heat to about medium temperature.
Do not touch them!
Leave cooking for 2 minutes.
After 2 minutes flip with your tongs for an additional 2 minutes.
Then place them in the oven at 400°F for 2-3 minutes.
Flip them in the oven and wait an additional 2-3 minutes.
Bring your pan out of the oven placer back on your burner and add your garlic butter to one side.
Melt your butter down.
Using a spoon baste all steaks continuously for 2 minutes.
Flip your steaks and repeat this process for an additional 2 minutes.
Using your tongs, make sure you cook all edges as well.
Remove Steaks from the pan and place them on a cutting board for 10 minutes. VERY important to let them rest for the full 10 minutes!
While your steaks are resting, heat another pan with 2 Tablespoons of butter.
Add in your chopped garlic.
Mix the butter and garlic for a minute or two.
Add the Prawns (Shells removed)
Cook for 2-3 minutes. (Prawns cook extremely fast and turn rubbery if cooked too long.)
Garnish with some chopped fresh parsley (If you want) and pepper.
Your potatoes will be done at this point.
Put them on your plate and cut the top off. Add butter, sour cream, pepper, and parsley. (You will not need to add more salt.)
Now add the steak, top with your prawns.
Serve with whatever vegetable(s) you’d like and serve.
