To be honest despite having lower health than the eye, I find fighting King Slime harder due to how much it likes to come close to the player compared to the eye that maintains a certain distance away most of the time.

you get them by going in underground hallow (for souls of light) or underground crimson/corruption (for souls of night) in hardmode
