To reduce the weight and make it last longer in storage. The heavier something is, the more energy it takes to get it to orbit. The more energy it takes, the more it costs. Lighter food = cheaper to get to orbit. They recycle the water on the station, and ship it up separately in tanks on the resupply vessels.

Blue Origins is experimenting with a reusable suborbital rocket that gets a tourist capsule past the edge of space (100km). They recently managed to land both the rocket and the capsule. I like to think that even though we may never get into proper orbit (like the ISS) people will still be able to experience space for a few minutes in a decade or so.
