As a person who has been making crepes on an electric crepe maker for about 30 years (I'm 39) I can confirm that the first few just always have a lot of bubbles and holes. The trick is that, as the chef, you eat those and no one else ever sees them. I would also experiment with dipping for less than 3 seconds.

The problem with the crepes is they are cooked only on one side. Real crêpes should be golden on both sides, so much better !

well the french crepes made in those huge grills made by food vendors (arguably the "real crepes") were cooked on one side and then folded to cook the insides, if i remember correctly. clearly im not french

@@lrizzard correct. The T looking spreader spreads batter around and when cooked on one side, you had filling and fold. When Rachel said it’s too thin, really it’s perfect (too thick would be a problem for cooking).

This, people can cook crepes fully without flipping them but it doesn't taste right/the texture is slighly off on one side. I am bretonne (aka French from the Crepe region of France, Brittany/Bretagne) and I can't get crepes anywhere in the states/Canada because they are never cooked on both sides. Even crepes cooked on crepiere should be cooked on both sides.

I used to live near this crepe place ran by this super sweet christian guy named paul, he would donate to the poor, he had a tip jar but the tips wouldnt be for him he'd use it to pay for peoples meals who had no money and were hungry. He even gave my father a big birthday feast free. He made so many good crepes but the one i cannot get out my mind even years and years later is his lemon sugar crepe. It was fricking amazing. The mandolin thing that I have has two knobs, one has “pictures” for the style of cut and the other one has numbers for the thickness. For anyone thinking about getting one, I would recommend one like that. It actually is nice to use especially if you have a lot of vegetables to chop. It can be a bit of an arm workout but it gets the job done

The trick to getting your tomatoes to taste good after being in the fridge is to bring them back to room temp before you eat them. All the tomatoes from the grocery store were already refrigerated for transport anyway, so they should be the same if you get them less cold

The best ideas come back around. The electric shredder is almost identical the Presto Salad Shooter my mom got in 1989-90. We used that thing for everything. Need a fancy salad, you just load in carrots, celery, onion, tomato, radish, even hard cooked egg, one after the other, and it would shoot them into the big bowl so prettily. I wouldn’t be surprised to find one at a yard sale or Goodwill.

This is a new Presto salad shooter (I checked the link) *but* at new inflated 2022 prices, e.g., $80 in Canada. Youch! I found one at a Value Village about 15 years ago and I had it for about 10 years before it finally died so pretty good deal since I paid about $7. I've really been wanting another but at $80 I think I'll keep checking the thrift shops.

Tips for the crepe maker. My mom made them all of the time growing us. Dip it for way less time. It’s getting dark bc you have to wait for a thick layer to cook. We always dipped and immediately out. My mom made a slow U shape in and out of the batter if that makes sense. Makes them nice and thin. Use a butter knife to pull the edge off. Or the spatula they gave you. The first few are always off and bubbly bc the mixture was just stirred and has air bubbles in it. It takes a few times to get it right but once you figure it out, it’s pretty easy.

When I was young I'd be out with my Grandma and she'd take me to this fancy restaurant and they made crepes just like that. On the back of a pan. Multiple pans going in a circle.
