Pastry chef tips for the sugar dome: it’s not supposed to be a caramel. Just got melted sugar that hasn’t crystallised enough. Cook 100g sugar, 50g water & 10g glucose syrup to 150c. Make sure the sugar is brushed down not touching the sides and DO NOT STIRR EVER! Let it do it’s thing and once at 150c, take off the heat. Cool down to about 125c to prevent plastic from melting. Using double layers of plastic wrap gently push down and somewhat immediately take off the ring from the plastic and voilà ✨

You can also use a greased or Saran wrapped dome shape to achieve the dome…. Ladle or bowl ( from another pastry chef)

All of this, but also Rachel's plastic wrap also seems to be super stiff for some reason. In all of the versions I've seen of this that have worked, the plastic wrap much is less rigid and more flexible.

A cake decorating tip for the graduated/multicolored icing is instead of piping the colors onto plastic wrap, turn a piping bag inside out then put on your gel colors, add icing and turn the bag right side out again. That's usually how I do it myself when decorating

More pastry chef tips for you-the icing hack is meant for gel color, piping gel is not clear gel coloring, it's gel icing like you get in tubes at the grocery store for writing names and stuff. The product you want are those little pots of gel color. Make a tiny line with a toothpick or something similar and you're good to go. I use this method to make candy cane swirl meringues for Christmas =]

According to Ann Reardon (H2CT) you don't need milk in buttercream, just a longer whipping time to soften a bit. This keeps structure and toughness for icing cakes

I watch and love Ann, too. It really comes down to the recipe you're using. Her recipe is clearly catered to her desired creaminess for her comfort/climate. However, if you have a higher proportion of icing sugar, it might never become creamy enough and adding a tablespoon of milk/cream might be preferential to some who like a smoother buttercream for spreading (also, if you're adding a flavour like caramel or concentrated coffee mixture). People run into trouble when they dump in like a 1/4 cup of liquid all at once and turn their buttercream to soup. Rachel's consistency looked good to me with the milk.

The world's butter reserves were really creamed when Rachel defied the specifically requested 276 grams of butter by adding two additional grams of butter thereby essentially buttering everyone up to use excessive quantities of butter.

For the caramel trick, if you spray a metal soup ladle with cooking spray and VERY CAREFULLY drizzle caramel over the back of it, it'll make a caramel cage that you can place over a scoop of ice cream. :) -source: culinary grad

Not super imaginative on my part, but it was cute, and the guests enjoyed the novelty!

love your channel! Watching these videos every Saturday makes my day. Suggestion: try ordering some bigger piping bags off of amazon or a pro baking site. They are three times as large and makes doing hacks like rainbow/multicolored piping much easier and that way you don't risk busting the bag lol

Easier way of doing multicolor frosting - open piping bag, grab a thin spatula or butter knife and dip into color, then paint a streak inside the piping bag (basically from as low as you can go to the top of the cone). Repeat w as many colors as you like, then dump globs of white frosting into bag (I usually prop the bag open on a large cup which helps make sure they go in well)

You can hold both icing ends (one end in each hand) doing the rolling motion in the air away from you and it will remove the air, making a more compact roll and should fit in tip bag if you don't have too much icing. That way you're not mixing the colors like you do when you squeeze it. 😁

Ive done something similar with colouring icing. Just using a toothpick to draw lines of colour directly into the bag. Though I've never done it with so many colours

There is a similar recipe called wonder white frosting that uses a 16 oz plain crisco , 16 oz of non whipped frosting, 16 oz powder sugar and 1/4 cup warm water( for thinning purposes) hold up well for piping and last in fridge for a while

Rachel for the icing, try the old-fashioned way and paint stripes of different colours inside the pastry bag, then fill it up with icing. That's effectively how toothpaste with the stripes is done too! Then you don't need to wrap it up in plastic, you just dump it right into the bag with the nozzle tip fitted and you're good to go!

What I do with canned frosting is just add it to the mixer and whip it up. Add vanilla and salt. But that's it. Usually I get 2 or 3 times the volume, without adding much at all!

As for the marble incing thing with the stripes your where trying to do you can do it so much easier by using a toothpick or like food paintbrush and paint stripes on the inside of a bag and it works so much better

An easier way to do the icing hack... just color the actual frosting and spread onto the wrap in lines (they should be touching) and roll-up. Regarding the plastic wrap parcels not fitting in the piping bags... just put it in as far as you can and start squeezing... it will get down there. :)

For the candy dome you need one layer or two of the plastic rap make sure it is stuck to what ur using so it stretches not drag it down and get a big cookie cutter because you don’t want the caramel to touch the cookie cutter then you can press it down

don't use piping gel, use the gel food coloring! Pipe that onto the plastic wrap or use a paintbrush. more concentrated, Wilton makes it.

If you use the paddle attachment (instead of the whisk attachment) when making icing, you won't get as many air bubbles when you put it in a piping bag.

Pro tip for getting icing in the piping bag: set the bag inside a tall glass and fold the edges over the outside of the glass. Then spoon or insert the icing into the bag, and there you go! Much easier and less messy.

Not a baking hack but a cupcake eating hack. Since I was little I have always taken the bottom off of the cupcake and put it on top of the frosting. It makes a cake sandwich that is MUCH less likely to get frosting on your nose and cheeks. I know it is a good hack because Duff Goldman eats cupcakes the same way! 😄

when making buttercream and if you want to make it more white, add a small anount of purple food dye. it will cancel the yellow and make it more white!
