He may be thinking of Chile Con Carne, which is very much Chili. Chili Con Carne and Chili are similar recipes, but Con Carne is the older of the two that includes beans. It was eaten with tortillas or Pan De Campo, camp bread, out on the ranches and on the trail by cowboys. Carne Guisada, is another meat dish that is stewed down into a thick gravy and eaten with tortillas.

Authentic chili has no diced peppers in it..just the meat lard salt and a mix of dried ground peppers and water. From there they started to add other ingredients in.

lol You're an idiot. You're clearly one of those health nut people that still believes things like eating high cholesterol food actually has some sort of effect on the amount of cholesterol in your blood (it actually doesn't), and eating fatty foods will cause you to gain weight (it doesn't). Animal fat, like the kind here that you think should be drained off, is actually about the healthiest kind of fat there is and is actually needed by the body to function properly, especially in colder climates where you need to stay warm... you know, like chili-eating weather. Maybe educate yourself a little bit before commenting and making yourself look stupid. Draining off that fat is just draining away flavor, as I said.
