@@marcbuisson2463 I love this question... it's a good question. (I'm no expert, I just eat delicious BBQ) However, for a long time, brisket had been the star of Texas-style BBQ. Now with so many innovative twists on traditional BBQ emerging, it's fair to say that beef cheek in addition to pulled pork, chicken, and even sausage is really popular across the U.S.

Beef cheek is one of the most representative beef cut of our long and slow cooked traditionnal stews, alongside the gîte (a muscle on the shank). Think pot-au-feu (in water), daubes (stewed in wine, like the Boeuf Bourguignon) or carbonades (in beer). Probably one of the most "french" cuts in my mind, so I thought it could be a french take of Melt on the more classical BBQ. That said, it's amazing that you already have it :>.

@@marcbuisson2463 that is so interesting. I did not know it was the most "French" cut. The best beef cheek I had in Texas was at LeRoy and Lewis, they have perfected the fat /meat ratio and it truly melted in my mouth. When I visited MELT I could not get over how perfect all the meat was especially the beef cheek. Very impressive. Thanks for sharing that tid-bit on the beef cheek I didn't know.

Be grateful for what you have man, cause it's a lot cheaper compare to the price in France. The restaurant Melt they went to charge 12 euros for 100g of brisket that's about 60 dollars for a pound, and they won't even ask you which part you want
