looks great. what casings are you using? I used hog casings last year and my sausage casings were really chewy. Not sure if I needed to get sheep casings or if I just overcooked the sausages... Any ideas where I went wrong?

Regular hog casings is all you need my man! Best advice I can give is to make sure your the sausages are firm, not plump to the point they are about to burst but enough that they have a bit firm. After you are done smoking them, immediately put them into an ice water bath. This will ensure that it not only stops the cooking process right away but it shrinks the casing enough to create an even snappier bite. If you don't fill it firmly or put it in a water bath, the sausages will not snap. I hope this helps!
