Is it possible to keep the letters upright while they are generally aligned around the shape?

This will vary by font style, but in general, no. What you see is what you get.

If you want only the bottoms to adjust to a shape like a circle, then Warp might work, but it doesn't work for all techniques and is a bit different from Text to Path - silhouette-secrets.com/warp-panel-tabs/

On silhouette studio how do I delete the circle on curved text and keep my curves word?

Right click on the text, choose Convert to path, then delete the circle. At 11 minutes in the video I share this an additional tips regarding this.
