I am so glad I found your video. I lost my mom when I was 11 so i never really learned to cook anything besides BBQ and fried everything. I am 45 now and I still can't cook. All the recipes I followed never turned out right and the videos I tried . My food doesn't taste or look as good. I can't wait to try this because it's so well explained and simple. Thank you

I feel like she messed up the curry so she resorted to thickening the sauce with the cornstarch slurry instead of naturally boiling down the water and potatoes breaking down to thicken. Also, gotta add a little brown or palm sugar to the curry! Then it will be perfect.

Bell peppers are not traditionally a part of thai curries. As a trained Thai chef, in Thailand they traditionally use onions, potatoes and chicken on bone + sometimes cherry tomatoes. Pailins kitchen has a pretty authentic version as well. In the west thai restaurants use boneless meat and a mixed vegetable combo to save money.
