This would be fun with my chipotle mashed sweet potatoes. I'm going to have to try it.

Scrape the top layer off so you have the marshmallows and a little of the sweet potato, make either sweet pot smores OR rice crispy treats and then you have the rest of the casserole for the gnocchi without the marshmallows being odd/messing up the sweetness ratio. Love this channel and Frankie! Would adore a Struggle Meals cookbook!

I’m not a fan of sweet potato casseroles. But this could have made an interesting hush puppy as well with the pockets of marshmallow.

As someone else mentioned, scrap the marshmallows off and use them elsewhere. Then use the remaining sweet potato for the gnocchi without the weird texture/taste.
