Hey Mo, turkey has giblets (heart, liver, gizzards in packet in neck of turkey) remove that. U can boil those and chop into stuffing for meat. the butt has(what you pulled out is the neck) that too can be boiled and meat removed to put into dressing. then rinse entire turkey well and baste and bake. cover breast to keep moist. I remove foil on breast one hour before done so it can brown too. not safe to actually put anything inside, but surround it with stuffing later. stuffing broth from giblets simple too. just add your sage, poultry seasoning, pepper, garlic, season salt of choice, onions celery and green peppers. I use seasoned croutons and unsweetened cornbread. that's another recipe. I am old school, old fashioned and scratch cooking. 😂😂❤❤
