How to make that viral Double Chocolate Muffin.
Here's what you'll need:
For chocolate syrup:
1/2 cup dark choco chips (80g)
1/4 cup hot cream (60ml)
1 and ½ cup all purpose flour (190g)
1/2 cup pure cocoa powder (50g)
2 tsp baking powder
1/2 tsp salt (3g)
3/4 cup sugar (150g)
2 cups dark chocolate chips (300g) plus more for toppings
2 large eggs
3/4 cup milk (185ml)
1/3 cup oil (80ml)
1 tsp vanilla (5ml)
1/4 cup yogurt (60g)
1. Preheat oven at 175ºC/350ºF. In a bowl, mix together dark chocolate chips and hot heavy cream, stir until melted. Set aside to cool down.
2. In a large mixing bowl, sift together flour, pure cocoa powder, baking powder and salt. Then add dark chocolate chips. Mix until chocolate are fully coated with flour mixture.
3. Make a well in the middle and add eggs, milk, oil, vanilla and yogurt. Stir to combine. Do not over mix. Scrape sides and bottom.
4. Place muffin liner in the large muffin tin or regular size cupcake tin. Scoop batter and top with some chocolate.
5. Bake for 25 to 30 minutes or until toothpick comes out clean when inserted.
6. Place chocolate syrup in a piping bag with long piping nozzle. Pipe the chocolate syrup on each muffin.
7. Serve and enjoy!
