We use acrylamide as a cross-linker when making polymer gels for doing things like sifting DNA in biochemistry. The Maillard process (pronounced "my - ard") is what we call "browning" when you are reading a recipe here in the US. It is responsible for making a plethora of flavor compounds that actually make food taste good. If you're worried about cancer then avoid the food that you know is terrible for you, participate in some regular level of exercise, increase your antioxidant intake, and make sure to supplement your diet so that your natural DNA repair pathways can fully function. Maybe you don't get a lot of selenium for example, so start eating a couple of Brazil nuts everyday. Most of all don't worry and feel the real feeling of joy for the gift of your life - focusing on that can correct your natural biochemical function as much as, or more than anything else you can do. Much love to you all.

I am a Gen Xer and back when I was a teen in the 1980’s worked one summer at Taco Bell and they fried using coconut oil then. As you mentioned McDonald’s used tallow. Then they all switched to seed oils which were lower in saturated fat but now we are finding out that we would have been better off sticking with coconut oil and tallow. Try for yourself, taco shells cooked in coconut oil and fries cooked in tallow are so much more satisfying . Likewise my Dad used to save bacon fat and use it to fry eggs. It’s probably not the healthiest but healthier than those acrylamide causing oils and fried eggs cooked in bacon fat when it comes to taste and crispy edges are far and away the best fried eggs.

Happy New Year doc, and thanks for sharing your knowledge with us. I am following you for over two years, and I think this video is perfect for me to post this comment. I always had troubles with my weight. I weighed 310lbs nine months ago, and now I am at 210lbs. It was definitely a slow process, but I never felt hungry, and I wasn't on restrictive diet. I just followed meal plan for weight loss I found at OnlyMeal, exercised 3 times per week at home, and I sleep at least 7 hours every night. Now I think that I am close to the best shape of my life. But my goal for 2025 is to achieve 180lbs and tone up my muscles.

Thank you for this video. And I’m so happy I came across your channel.. I have so many illnesses.. I have asthma, high blood pressure, high cholesterol, anemic, nasal polyps, chronic headaches and migraines, insomnia for 37 years, sleep apnea and type 2 diabetic. I’m on medication for all of that. Due to my asthma becoming so severe I was put on prednisone. I started at 5mg to 40mg. And then hello diabetes. 3 years ago I noticed my eyesight was a little blurry then the floaters appeared. Having all of those things gets to me when the things I was able to do a few years ago now feels hard to do. I was in a car accident in 2014 that caused me to have 3 bulging disc so bending over causes me a great deal of pain. The prednisone caused me so much water weight gain that took me from 150 to 188. I took back some control by changing what I was taking into my body. I’m now 149 with another 10lbs to go. I now buy, kale, spinach, cucumbers, tomatoes, avocados, cold pressed olive oil, apple cider with the mother, tuna every now and then. A pinch of pepper and a pink of pink salt. I make my own fresh juice that contains navel orange, pineapple, lemon, kale, green apples, ginger, apple cider vinegar , carrots, beets and water. No I don’t put all of that in one juice I changed it up. By doing those things is how I lost all that water weight. I was asked 2 times if I stopped eating? SMH? I try to stay positive because I know many people have it worse than me? And ironically I tend to say I rather it be me than my family because I don’t want them to feel what I do? My husband says he doesn’t know how I handle all of this? All I can say is easy because I don’t dwell on things nor do I let that stop me no matter the pain! I just find ways around out. So again thank you for this video. Happy new year to everyone. 😁

Acrylamide is not an ingredient you'll find listed on food labels because it is not intentionally added to food. Instead, it is a *chemical byproduct* that forms when certain carbohydrate-rich foods are cooked at high temperatures, such as frying, roasting, or baking. Specifically, acrylamide forms through a chemical reaction between *asparagine* (a naturally occurring amino acid found in many foods) and *reducing sugars* like glucose or fructose. *Foods High in Acrylamide (To Limit or Avoid):* - Corn chips - Potato chips - French fries - Baked goods (e.g., pastries) - Crackers - Cookies - Breakfast cereals - Bread crusts - Roasted coffee *What is Acrylamide?* Acrylamide is a chemical compound that has raised health concerns due to its potential carcinogenic effects. It is found primarily in carbohydrate-rich foods cooked at high temperatures. The substance was first discovered in food in 2002, and research is ongoing to better understand its health impacts. While the occasional consumption of acrylamide-containing foods is unlikely to pose significant risks, frequent and high intake may be harmful. *To reduce acrylamide exposure:* - Cook foods at lower temperatures when possible. - Avoid over-toasting or heavily browning foods. - Choose boiling or steaming over frying or roasting. - Limit processed and fried snack foods.

I can sure taste a difference, but overall sense of vitality and hard to ignore inflammation of joints and digestive system are quite apparent. It needs to be mentioned that an older body doesn't handle any kinds of stresses like a younger bodies do, which includes dietary stresses as well as physical ones. Ur so gullible if u think the Kennedy who’s family despises him is going to change the health of America, he’s not even healthy himself and just met last week with the same people responsible for how the food is and guess what they ate at said meeting….mcdonalds😂
