As a Chef, you are all correct. Above about 100$ a person, your food won’t get much better by spending more. At that price point and up you’re essentially paying to see dishes that already exist be turned into art. Usually in these restaurants the price point is no longer meant to make your food taste better, it’s for the little things. Consistency, paying for servers that can handle any situation, accommodating guests needs, getting first pick on produce, hiring cleaning services, buying niche equipment etc.

My grandparents were beekeepers, so I literally grew up munching on honeycombs straight from the hive while running around in the fields. It looks so weird to see a microscopic piece of it presented as a gourmet dish in a 450$ meal. But then again, so does seeing the lonely jalapeno, the fried flower or the one single cooked mushroom. Oh well, rich people are always so eager to throw their money at anything exclusive, new or extravagant so props to them for being able to massively capitalize on those glorified salads and forest treats I guess
@NorthyStarrs
@NorthyStarrs 10 ай бұрын
I wouldn't be surprised if that honeycomb wasn't actually made by bees and is actually just empty comb that they filled with different colors of honey using a cheap plastic pipette. It looks sickly compared to what honeycomb I've seen and had..

My grandma used to cook a dandelion honey when I was a kid. She will send me to collect 100 dandelions, then we will take out the petals and boil them till the water is deep yellow, then we will sperate water and petals and add lots of sugar to the water and cook it till it becomes tick. It was sweet and golden like honey and we was eating it the whole winter. My family was poor, and it was back in 80s in USSR. There was not much food. My grandma will also cook wild roses to make oil for skin and hair, and dry all kind if herbs. This lunch reminds me that. Being poor and eating flowers. And now people do it bc they have too many food and money.

Becoming a number one restaurant by selling a raw honeycomb is equivalent to painting a canvas white and some yellow and selling it for tens of millions of dollars. I understand neither of them... But then other dishes were really unique and creative maybe that's what had happened with the artists who made that super basic canvas painting. He had other good paintings and so was already known for being creative.
