The universe being described as flat doesn't refer to the expansion or the distribution of galaxies being in a plane like the solar system, it's about the structure of spacetime on the largest scales. We don't actually know that it is flat, but we expect that it should be and if it isn't then it's so close to flat that we can't currently tell the difference. The observable universe is perfectly spherical regardless, simply because of the speed of light limiting how far back in time and therefore how far away we can look - there's more beyond what we can or will ever be able to see that should also be expanding equally in all directions, but we've no way to ever know anything about it. Our universe in total (observable and beyond) could even be just one expanding bubble in a sea of other universes. As for Voyager, Voyager 1 did go up and out of the plane of the solar system in the z direction but only because it had to end up going that way in order to fly by Saturn's moon Titan, not because that was actually desirable. Voyager 2 went out along the plane of the solar system in the x/y direction.
