American pastry chef Milton Abel has worked at high-flying places such as Noma and The French Laundry, but in this video he visits a classic Copenhagen institution: Bosse's bakery in Østerbro, which is one of the oldest in the city. Guided by owner Jimmy Bosse, Milton gets a lesson in the secrets of the trade, knocks the stuffing out of a 4lb block of butter, and makes a delicious pastry known as the 'baker's infected eye'.

danish bakery and pastries are at a whole other level, only the rye bread takes time to truly appreciate it for what it is. nothing like danish bread, the best.

@@joannaw2745 Most modern bakeries are boring and have the exact same items down to the detail, they are the bake off's he's referring to. But we still have traditional, high end bakeries left, only they are slightly too expensive for lower to middle class incomes so the gas stations and bread factories has taken the mantle. Other examples than Bosse could be Lagkagehuset or Emmery's and some of the diverse new kinds with altruistic purposes like being green or vegan or whatever. I'd even say our gas station bread is superior to any bake off I've had driving through Europe

Admitting to not tasting his own product is kinda disrespectful to the trade, traditions and customers imho I'm Danish and have worked part time night shifts at a local bakery from the age of 13 to 17 and in the eyes of my old boss, who had learned the trade from his father (and his father's father etc.), this guy would've been considered an imposter or possibly even an outright fraud.

This was honestly one of the most wholesome videos I’ve watched from munchies in a while. I can HEAR those 27 layers at the end. Insane. Also, GREAT host! More of him pleasee!!

Im the son of a baker, and i have made so many ''bakers infected eye'' and i had no idea what they were, and i have never tasted it either! My Dad has a bakery in Odense Denmark and theres still so much stuff, i havent tried. But Romkugler is by far one of the best ''none fresh'' things you can get, in a danish bakery!

Same here. It's so sad that several of these traditional bakeries have gone out of business in recent years, especially around the capital. Bosse's is one of only a few classic ones left in downtown Copenhagen. Still I pray for their existance and support them whenever I have the choice!

Bager Bosse is my local baker. Like you, I buy the Østerbrobrød (the signature bread). I also buy Hindbærsnitte, which is puff pastry with raspberry jam and icing. Very popular in Denmark, every baker has it, like the cinnamon snails. But it´s less technical.

i also work at a danish bakery and I am surprised it is THE EXACT SAME methods and the exact same mashines and rolling carts we use lol and our pastries look the exact same. Too bad i dont bake, I only am a waitress and sell bread in the front hahah. And we daily have to throw a lot out, the danish pastry gets bad after one day, but a farmer comes get it and feeds his pigs with it

In Scandinavia these are not called Danish pastries, they're called Wienerbröd which means Vienna bread.

yeah its not really danish, some austrian pastry chefs brought the recipe to denmark in 1850 but you cant really expect americans to get history right :P
