From an interview with this episode's director, here’s the bicycle part for anyone wondering: Another essential piece of making “Honeydew” authentic was addressing “the subtle tension of a tall Black man in Copenhagen, where you think the shoe is gonna drop at some point,” Youssef says. “And then it actually just doesn’t.” Toward the end of the episode, Marcus comes across a Danish man who’s had an apparent bike crash, leaving him caught underneath a collapsed wire fence. It’s pitch dark outside, and the man can’t speak English. “Personally, that’s my biggest nightmare,” Boyce says. “Someone being hurt while no one else is around, and the [danger of someone thinking], ‘Was it you?’ And for that to happen in a foreign country, you think about the worst case scenario. But he just helps him.” Marcus lifts the fence and saves the man, who stands up, wraps in him a wordless hug and bikes away. “It was like a reward for the nonverbal communication that he’s used to with his mom,” Boyce says. “Being able to help a person, and receive love from this person - a very weird, drunk dude, but still. You don’t really see him hug anyone in the show, except maybe Tina. So this is a hug that he needs.”

I interpreted it as Marcus saying goodbye to his mom in a way. It was kinda set up earlier that he was afraid he wouldn't get to, and this scene was him just hugging an old person and finding comfort in it, preparing him for what's to come in a way.

Marcus is a great pastry chef because he doesn't just love desert, he get the emotional connection with desert and he wants to understand it. This episode is so good at explaining who Marus is and how lucky Carmy was to have him.

this episode of TV is so special, it's beautiful in Denmark, he's on his great adventure but looming over him is his Mom passing and he addresses it at the end, it's almost like a fourth wall break, it's so haunting, I've thought about this for weeks now

Given that he was sent there, I feel the context clues with how many times it's been said how great Carmy is as a chef, I think that it's Carmy whom Luca was alluding to about a chef better than him. Marcus was sent there for a specific reason, and I don't think it was some favor that he's mentoring him. Carmy is the one who's been around the world working and honing his skills as a chef.

this is my favorite episode of season 2. Marcus is my favorite character in this series and to get an entire episode dedicated to his growth as a chef was spectacular. I always took the scene with the man on the bike to mean a couple of things. 1) it gave Marcus experience outside of the kitchen, something Luca told him was important for making good dishes. 2) considering that Marcus' mom has been sick for 4 years, he probably feels like he can't help her as much as he'd like to. this was his chance to help someone in a meaningful way. in addition, that hug was something he probably really needed since he couldn't really get it from his mom. there are a lot of great moments in this episode and any time we get to spend more time with Marcus, I'm a happy camper. 😃 *edited due to typo*
