Where does bread get its fluffiness? Swiss cheese its holes? And what makes vinegar so sour? These foods may taste completely different, but all of these phenomena come from microorganisms chowing down on sugar and belching up some culinary byproducts. Erez Garty shows how your kitchen functions as a sort of biotechnology lab, manned by microorganisms that culture your cuisine.
Lesson by Erez Garty, animation by Smart Party.

The animation in this one is so cute, and I love the little details and the passion put into it. Although it does bug me that the sugars are usually shown as pink cotton candy, even when you’re talking about lactose from white milk; you changed it to purple when talking about wine, so why not be a bit more free with the colors?

1st off: The bacteria isn't waving a Swiss flag, the Swiss flag is squared. The only instance where rectangular flags are used, is on vessels of the Swiss merchant navy. 2nd: There is no such thing as "Swiss cheese". If I go to the local cheese shop (they are quite common, most towns and villages have one or two) I can surely choose between a good 150 or more different cheeses. My favorite is "Aaräwasser", try it if you are in the Bern region. 3rdly: Damn sweet video, well done :)

Wait I know that wine can turn into wine vinegar but juice can turn directly into vinegar(which is why you have apple cider vinegar) given that you have the correct conditions and bacteria. In fact a book I have on preservation has acetic acid fermentation as the primary fermentation in vinegar formation(and it is what the mother in the vinegar does since if you take the mother from 1 container of vinegar into a second container of juice it starts turning into vinegar as soon as the mother is in the juice) and alchohol fermentation as the secondary fermentation by a different kind of bacteria so if you don't want alchohol in your vinegar, don't add the alchohol fermenting bacteria to the vinegar.
