I really love Heritage Steel's 8 quart saute pan. Few make pans this big. It's perfect between domestic and restaurant size cookware. As the Belgique stainless steel bought at Macy's 30 years ago is in great shape and withstood the test of time, I only buy to fill in gaps. I do own some Cuisinart Chef's Classic too and like it a lot. I've cooked professionally at hotels and the soup kitchens for close to 30 years now. Balancing between price and use is important when thinking of cookware.

That 8-quart sauté pan is very unusual. Pans that big are usually stock pots with two small handles. Nice to have the long handle on one side.

Thank you. Hestan, Demeyere, Made In, All-Clad, Heritage Steel, Tramontina Tri-Ply, Viking 5-ply, Goldilocks, Misen - those are a few. There are so many good ones. The best one for you depends on budget and preferences.

Something I've found with Smithey is if you want to keep the bronze color you cannot cook anything with water in it. Even water content in meats will take it off. I was able to keep most of my factory seasoning and color by only deep frying in my pan for the first few months. I'm sure doing some heavy seasoning before first use will help as well. Hope this helps.

Thank you - I’ve noticed in the beginning it gets blotchy and appears to strip away. After a while it starts to darken. I still need to season mine a bit more.

@@PrudentReviews If you’re interested there’s a little known cast iron manufacturer called Austin Foundry Cookware. I’d say it’s comparable to Stargazer except with pour spouts. I never see anyone testing them.

Throwing in my two cents: I’ve got a lot of the things here, and they all serve a purpose. Special shout outs to the Lodge USA enamel 3 quart which is really well priced for most people, and is perfect for most boule bread loaves that you’ll make at home. Is the enameling as good as Le Creuset? Not necessarily, but I feel it works just as well for most applications, and the things I see on it do not affect cooking performance. If you’re on the fence on the USA enamel, don’t be. It’s an absolute delight to use, and feels solid in the hands.

@@PrudentReviews please do! Le Creuset don’t make anything near the magical 3 quart we’re so used to in the states, and it’s a perfect size to do smaller meals in. I also feel it was unfair of me to state that it is of not the same quality as the French masters. They’ve barely started selling these and the quality is more than comparable to Le Creuset, which have been selling this cookware for umpteen years at this point. It’s a feat that, at this point, they’re undertaking and doing a fantastic job at, and that should be applauded. If lodge is reading, please don’t take what I said before as an insult. The only real issue I’ve seen was paint flecks within the enamel coating, that’s it.) (If you’re just baking, though, get the lodge bread oven or regular cast iron Dutch oven)

I need help;i want to buy Tramontina cast iron pans, but I am skeptical about the handle. It's attached to the pan by a bolts which I don't know if it good or not. Is it better than one-piece cast iron?

One piece cast iron skillets don’t have rivets, so the inside of the pan is smooth and uninterrupted - this makes it a little easier to clean. However these handles are usually short and get really hot. Handles attached with rivets are usually longer and designed to stay cooler on the stove. Usually they are steel and hollow inside so they don’t hold heat. The downside is that the rivets collect grime and need to be scrubbed.

edit: oh, never mind, I guess they left the US... I was a little surprised Solidteknics USA wasn't in the video. They make wrought-iron pans that are smoother and lighter than cast iron pans typically are. I was drawn to them because the handle is the same piece of metal as the pan so there are no seams or rivets. I'm assuming the profits go to Australia, but the iron is apparently sourced in the US and the pans are made in Chicago (they even stamp a little outline of the US into the handles). My thoughts... I have been able to get a decent season on mine, but it definitely doesn't adhere as well as the seasoning on my Lodge pans. I like that the handle is integrated, but it's not comfortable; they did what they could, but there's only so much you can economically do when stamping a pan from sheet stock. The pans have pouring lips, which I personally think are a necessity. They're pricey, so that's a bummer.
