I had no doubt that you would like Gaziantep-style baklava. Since you are French, you are more likely to appreciate the taste of rich-buttery taste and croissant-like texture of Antep baklava. The last on you tasted is called sobiyet. Within the family of baklava-like desserts that is my most favorite. It is less sweet, much lighter and very flaky. The one you thought to have mussels have no mussels, not at all. Just because of the shape it has that name. Putting meat or seafood in baklava is almost sacrilegious. All the best and may you meet with good people all along your journey.
