I had an old wooden bread lame. In 20 years, I never cut myself on the razor blade. Then because of this review, I got the Wire Monkey UFO lame. Yesterday, however, I sliced my finger open with the Wire Monkey lame. The round shape is confusing and impossible to know where the razor is inside. Even the slightest edge poking out the sphere will cut your finger if not careful. It's kind of a pain to screw and unscrew. The trick is not to keep your fingers on the edge. I now don't know if I should've discarded my old lame. The Wire Monkey Goose lame is safer than the UFO lame. Wire Monkey also has the Pico lame. The blade sits within a rectangle. Too bad the Pico rectangular lame wasn't designed to be more like the UFO lame. Maybe it will take me awhile to get used to the UFO lame but I'm not yet convinced.

one thing here not considered is the sanitation safety of the designs. The Astra and UFO lames look like they are small bio-hazzards by design but perhaps they are easy to disassemble completely for sanitizing?

It would be helpful if you covered razor change (safety wise) and "holster" or whatever way razors are covered when not in use.

Hey Grant! Just sub and have enjoyed your videos so far. May I know if the turn knob on your favourite baker of seville lame , get in the way /snags on your dough? Bread baking noob ie. me, always have scoring problems. Either dough snags or the cut is not deep enough. Thank you.

I would say get the UFO lame since it doesn’t have a knob, so it definitely won’t snag on anything! But the Baker of Seville is great too, you just have to make sure the knob is turned away from the dough when you are scoring 👍🏻

I had that exact problem when I got the Baker of Seville lame. I was tired of my blade popping off when I scored quickly, so I thought one with a secured blade would be awesome. The knob almost always snagged on my dough when I was cutting the ear on a batard. It’s just a bit too large if you are scoring at an angle.

are those pans on your stovetop, 'cast iron'? if yes, where did you buy those?

I think your results will be better if you score at a 45 degree angle. I found most lame to be too short as I like to score deeply. I use a scalpel with disposable blades.

Wire Monkey is the best. I've got the UFO and soon will acquire the Arc and Poco.

Hi Grant, I'm sorry but I've tried the top 2 you recommend and totally disagree with you. It almost takes a shop vise to open the wire monkey up (there's no place to grip it); and the Baker of Seville has a frame on the backside that's only 1/4" away from the blade edge, so the frame ends up dragging and marring the dough surface when you try to cut more deeply than that. I actually think the free cheap one you pan is better than either of these 2.

Hey, thanks for the comment! I appreciate the honest disagreement. I guess the cheap one is a classic for a reason too. I believe there’s one wooden model of UFO lame that has deep grooves so it’s easier to open, so that would probably fix the hard to open problem, but I completely hear what you’re saying about the UFO and the Baker of Seville. They’re not for everyone, or for every type of scoring.

Best bread lame can be purchased from San Francisco Baking Institute @ $7.50. This is what professional bakers use, by the way. These others a gimmicky, just so you know.

Thanks for that additional info. I understand that professional bakers use a wide variety of lames, but even if that weren’t the case, I think sometimes home bakers want lames with different features, since our day to day baking schedules look different to those of professional bakers.

best option is disposable scalpels, not repurposed razor blades on sticks.

$35 for a basic puck lame? You can get similar for £4.99, for goodness sake shop around. I used a folding cut throat razor for about 30 years.

i can't be the only one annoyed by the pretentious, needless use of french words by hipster americans when talking about sourdough bread, which isn't even french. first of all, it's "lam", like "lamb" or "lamp", not "lahm" or "lom", and it just means blade. c'est une lame de rasoir. it's a razor blade. call it a razor blade. stop saying "lahm" every 5 seconds! and while we're at it, next time you feel inclined to talk about your sourdough "boules", keep in mind that you're just saying "balls". and yes, "boules" is also french slang for testicles.

Yes, and bâtard means bastard. Lame means blade. Boule means ball. And levain means leaven. There’s a lot of French language that has made it into the common English language parlance, whether one is hipster or not, and whether one lives in the US or not. And yes, we all know that sourdough comes not from France or San Francisco, but from Egypt. Merci pour l'information, Maltfalc 😂 I want to say that next time you feel inclined to comment, please make it constructive and civil. But, I feel like you really needed to get that off of your chest! I hope you feel better now.
