@@singaporefoodie I became an instant fan of wet hokkien mee after I tasted the version cooked with lala clams from the now defunct stall and staff canteen at changi terminal two. Even the chendol there was top notch number one with tasty coconut milk and top quality gula melaka

I think the difference is in the Wok Hei. Charcoal cooked food seems to be more aromatic

@@singaporefoodie The best HM is home fried, so less oil can be used n it tastes equally good. My niece n my helper as claimed by my relatives can fry the same or even better than them.

The Hokkien Mee charcoal fried with lots of wok hei looks real yummy n delicious, but the oil being so black like charcoal is a no-no for anybody's health.

Hopefully they don't use longkang oil, which Chinas' medias n vloggers claimed tt was widely used in China thus adding extra flavour to their foods.
