Hey folks! So last night for tea I made this wonderful creamy chicken and mushroom pie! It was so delicious and very easy to make…a wee bit more time consuming than throwing a shop bought one in the oven..but much more satisfying :) Everything I used will be listed below

Makes enough caramel for 4-5 adults (I used a 20cm/8 inch pie dish)
* 2 Sheets ready rolled pastry (one shortcrust, 1 puff)
* 2 Chicken breasts
* 2 Good knobs of butter for frying
* 200g (7 oz) chestnut mushrooms - diced or sliced
* A splash of dry white wine
* A dash of nutmeg
* 2 Tablespoons fresh tarragon - chopped
* 1 Tablespoon flour
* 2 Teaspoons English mustard
* 300ml (10 oz) Chicken stock
* 200ml (7 oz) Double or heavy cream
* 1 egg - separated
* Salt & pepper to taste
* Optional herbs for the poaching water
