Ingredients
2 lbs tiny shrimp Cleaned, rinsed, and drained
1 cup all-purpose flour
½ cup cornstarch
2 large eggs
1.5 cup water
1 medium onion
2 small carrots
1 medium sweet potato
1 cup butternut squash
cilantro
1 tsp salt
1 tsp ground black pepper
1 tsp garlic powder
cooking oil for frying
Instructions
1. Start by cracking the eggs into a large mixing bowl and adding water. Whisk until well blended.
2. In another bowl, mix the flour and cornstarch together. Gradually add this dry mixture to the eggs and water, stirring continuously.
3. Slice the onion, sweet potato, carrots, and butternut squash into thin strips. Finely chop the cilantro. Combine all these ingredients with the egg mixture, stirring until it forms a thick paste.
4. Next, add the shrimp to the mix. If the batter feels too thick, add a bit more water until it reaches your desired consistency.
5. Heat enough oil for deep frying in a pot or a deep fryer pan over medium-high heat.
6. Using a large spoon or an ice cream scoop, form small circles of batter and gently drop them into the hot oil, one by one.
7. Fry each side for about 3 minutes, or until golden brown. Use tongs or a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to soak up any excess oil.
8. Serve your warm shrimp fritters (okoy) with ketchup or vinegar for dipping. Enjoy this delicious treat!
