This is my quick and easy recipe on how to make the BEST crispy roast potatoes!

INGREDIENTS
500g Russett potatoes
100g goose fat
2 gloves of garlic
1 sprig of rosemary
1 sprig of parsley
1 tbsp of cornflour
1/2 tbsp of olive oil
1/2 tbsp of baking soda
Salt
Pepper
METHOD
1. Peel the potatoes.
2. Chop into quarters.
3. Leave in a bowl of water for 10 minutes to remove the starch.
4. Finely chop the parsley and 2 cloves of garlic.
5. Drain the potatoes in a colander.
6. Parboil on high heat for 10 minutes, adding 1/2 tbsp of baking soda and salt.
7. Pre-heat oven to 180c/370f.
8. Place the roasting tray in the oven with duck fat.
9. Drain the potatoes in a colander.
10. Pat try.
11. Season with 1/2 tbsp olive oil, 1 tbsp cornflour, salt, pepper and garlic.
12. Shake thoroughly to fluff.
13. Place the potatoes in the hot roasting tray, throw in rosemary sprigs and stir.
14. Place in oven for 25 minutes
15. Remove from the oven and stir the potatoes.
16. Return to the oven for a remaining 25 minutes.
17. Season again with salt and black pepper.
18. Garnish with parsley.
