If you like monster hunting stories or pieces of media I recommend the manga Drifting Dragons. The life of people that depend on hunting dragons, getting the corpse, then cut it down to sell the parts and eat what they don't sell, kind of a chill manga but the drawings are amazing. Check it out!

Personally I think the appeal is in the fact that "monsters" have haunted childhoods for centuries, and while many of these monster hunting media sources fall short in various ways it still gives a sense of empowerment now that "the horrid demons from my youth now fall beneath my heel." It's the sense of overcoming fears and becoming stronger than we were. In short, it's a power trip.

What I like about the Witcher and Monster Hunter is that they do a very good job of making you like the monsters or at least having you sympathize with them, even in spite of you having to hunt those monsters for game play reasons most of the time. Even without any narrative push, like with Dodogama.

One thing you didn’t mention about monster Hunter if hoe you get new weapons and armor and effectively grow stronger harvesting the monsters parts and turning them into weapons and armor making the power of the monster you fought your own to add on to this you don’t get enough monster parts to make full set of armor and weapons from a specific monster in one hunt, especially in older games you would have to fight the monster several times the effect was when you had a full armor set and weapon of a specific monster it’s a trophy that says you understand how the monster operates and moves and acts intimately because you did not defeat it once but several times

Another thing about The Witcher series is that you need to read the Bestiary in order to know what kind of monster you will faced and know it's weakness. The weakness for the monsters are mostly Oils and Signs which is a simple magic ability to kill the monster. Geralt didn't relies on brute strength to kill these monsters but rather uses his speed and reflexes to get things done. Geralt also possesses an endurance to the mutation and they decided to injects him with more mutations which as a result, his hair turn white and that's how he gets his nickname "White Wolf".

One really fun, overlooked monster slaying game is Evil West, cheesy as all Hell, but a very fun spaghetti western-meets Helsing. The characters all fall into pretty standard niches, but the character design and steampunk/gothic vibe is fantastic

I think one monster that stands out to me is that one episode in Supernatural where the kids weren't ghosts. They were alive and the house just had secret passages.

The games I've most replayed in my life were Monster Hunter World and Stories 2. Why? Cuz monsters are cool, hunting them is cool, learning about their biology is cool, exploring the maps is cool, searching for a Mizutsune egg but taking decades to get one because I either killed the mother accidently cuz the paint ball didn't work or just because they're extremely hard to find is... Not that cool. Damn you, Monster Hunter Stories 2! LET ME HAVE MY GODDAMN MIZUTSUNE >:(

As much as I love Hunt: Showdown I don't really think it classifies as a "Monster hunting game". Yes, maybe during your first few matches you believe the game is about fighting monsters and bosses mainly, but for active players the real thing is facing other hunters and be the one that extracts. That's why everyone calls it a extraction shooter. If the game was solely about killing a monster and extract a bointy, I wouldn't play it, I actually don't understand those who get the bounty and escape without facing a single player. Yes, I like the bounty mechanic, but in my opinion it's just a mechanic to encourage gunfights. Sorry for the long comment, I just love the game I guess

Personally, I like Larry Correia's hunters. They're either victims or have been hunters for generations, unlike most urban fantasy they actually get paid. Have a whole bounty system of what and what not to kill. Aside from a few greedy individuals, most of them are indeed heroes. (Basically SPN + Expendables.)

Chapter 2 of The Dragon, The Hero, and the Courier. It’s a historically accurate medieval world using primary sources and references. They treat the Hero going out to slay a dragon as a massive event. Blacksmiths to repair weapons. Carvers for the Dragon Meat. Paper for the receipts for the others. Hundreds of porters for the scales. By the time the dragon has been picked clean, an entire new town will be born.

A weird explanation as to why Hunters in Monster Hunter's universe can wield these batshit insane weapons, is due to the fact that we are the player and players as a whole are all weird super soldiers who have been experimented by some weird older species. ( Btw this lore is iffy at best, And to many this has been Ret-conned )

17:24 godeater is a post apocalyptic world, where aragami (mad gods) which are man made creatures, that consumed the world, their cells literally devour everything, so to combat that, they look for human who have a Natural affinity towards the aragami cells, in order to use a god arc a weapon made with the same cells and will only react to you, ect…. The more cells your body can react and adapt too the stronger you are, ect , That’s my brief summary

Made in Abyss is straight up a marvel of worldbuilding when it comes to the creatures that the Abyss can throw at the protagonists. Again, not really about the hunting, but certainly about cataloguing and even slaying them from time to time.

I have to say the novel series by Larry Correia (1st volume is "Monster Hunter International") and the mangas of Berserk... for videogames you are pretty much a monster hunter in most JRPGs, but the Monster Hunter, Xenoblade Chronicles, Ys and Tales games are my favourites

God Eater is basically Monster Hunter but the monsters dont "die" They're called Aragami (angry god), superorganisms made of these superpowered cells, taking whatever form they want Here's the kicker though, they absorb information and change shape by *eating* said thing Everything from organic things to straight up fucking buildings So while the monsters are admittedly very outlandish compared to Monster Hunter, there's a certain charm to how they're designed, at least for the older games The reason they don't "die" is because when the core is destroyed, the cells disperse, only to regroup someplace else, as something else. Real freaky shidt There's even one that straight up doesn't die at all, the Hannibal can stay immobile after its core is destroyed, then it just regrows the damn thing as if nothing happened 😂

Dude if you like depictions of good ol' monster huntin', you need to watch Primal. Seriously, watch the first reveal trailer with all the monsters screaming at the camera and tell me that's not MH as fuck. At least the first season, the second one leans more into the human side, but the first season is pure raw violent nature and survival of the fittest. It's about a dinosaur riding caveman fighting all sorts of beasts, you can't go wrong with a concept like that.
