I have two special recipes for you today. The first one is cauliflower pilav - a recipe that goes perfect as the side dish, it can be a great main dish when eaten alone. The second recipe is somewhat of an invention of mine my guests love to eat. It's a super delicious, marinated fish that's surely going to convince you that heaven exists and it's here on earth. Even those who do not like fish and cauliflower will not get enough of it. Enjoy 😘

½ cauliflower (500-600g), finely chopped
2 cloves garlic, finely chopped
3 tablespoons olive oil
2 handfuls of walnut, finely chopped
1 teaspoon salt
1.5 teaspoons black pepper
1.5 teaspoons curry powder
Half cup of water
For the green sea bass,
8 cloves garlic, finely chopped
7 dried red chili peppers, chopped
2 handfuls of raw almonds, sliced
Half bunch parsley (100g), chopped
3 tablespoons white wine vinegar
8-9 tablespoons olive oil
Salt
Black pepper
6 boneless sea bass fillets, skin on
• Preheat the oven on grill with fan to 200 C (392F).
• Divide the cauliflower half and cut it into small pieces.
• Put the half amount of cauliflower and a garlic clove in food processor and pulse it until have crumbly texture.
• If you put them all at once, the bottom part might be puree and on the top, there might be big chunks.
• In the last part of cauliflower, add a garlic clove again and also walnut and pulse with together.
• Heat the olive oil in a big pan and add cauliflower and cook around 5 minutes on high heat until they get a brown crisp.
• Add salt, black pepper, and curry powder on it and pour water to combine all flavors and clean bottom of the pan.
• When the bottom of the pan is clean and cauliflower is not soggy, your pilaf is ready.
• To make the topping of the green sea bass, put garlic, almond, red chili pepper, and parsley in a bowl.
• Add white wine vinegar, olive oil, salt and black pepper to the bowl and give everything a good mix.
• Oil an oven tray and place the boneless sea bass fillets. Make small incision with knife without cutting. Thus, the sauce can go deeper and make the fish more flavorsome.
• Spread in a generous tablespoon of topping on sea bass and cover all over it.
• Put the fish preheated oven on the highest rack cook about 8-9 minutes.
• Be careful not to cook the fish too much.
• Time for serving, get a big plate and put the cauliflower. Place the green sea bass on it enjoy your meal. Bon a petit!

Hi and Bonjour from Montreal Canada. We cooked this dish this evening and it was delicious. For the first few bites, we were skeptic but the taste started to grow on us. We just loved it. The pilaf was above expectation and never realized we were eating cauliflower. Due to confinement, We substituted parsley and walnuts with fresh coriander and pine nuts. We used halibut for the fish. I don't know how I found you, but I am exceedingly 😊 I followed your instructions, exactly with Salmon!!! My family called it a gourmet dish and spoon delicious! My son said: "Cauliflower?" "Amazing! I have salmon, so I will try this with salmon. I just learned after 3 trials with cauliflower, it's basically like a "sponge", it will soak up whatever spice/sauce you cook with. I tried it with BBQ crush peanut sauce, it taste good.

Excellent! We made your recipe shish kebab yesterday. We broil it in the stove under the top burner, on two soaked chop sticks each, hanging above aluminium container (had to respect my crazy fire alarm))). It came out excellent anyway! Thank you!

Wow! This dish is incredible! We live in South Africa and my husband caught us a fantastic fresh yellowtail (kingfish), I wanted to prepare it in a way that would do it justice, so it didn't die in vain. I had to adjust the cooking time because the my fish was quite thick but thanks to the brilliant tips and reasons you included for doing things it came out perfectly! We eat a LOT of fish and this recipe is definitely one of the best we have tried! I can't wait to make it again for all our friends. The cauliflower was incredible too! Just made it today ! AMAZING !!! switched almond with sunflower seeds, as my son has allergy to nuts. Cauliflower pilaf was so tasty and yummy. My boys ate it all. I will need to make 2 cauliflowers instead of just one. Seabass was sooo tasty. A definite winner. Will prepare it again. Thank you Refika.

Refika, I come from a region of India, Bengal, where life is synonymous with fish. We live and breathe fish. So when on my recent trip to Turkey I saw all the fish, and rows of anglers everywhere, you can imagine my delight. However, my children, brought up outside of Bengal, never quite appreciated fish. A tragedy for me. They freaked out on fish in Turkey. Now they want fish cooked the Turkish way only....! I am delighted. Keep posting fish recipes please. I am okay with their not liking Bengali fish... Turkish is fine.... 🤣🤣🤣🤣🤣🤣 As long as it is.... FISH... 😃

Thank you for posting a fish recipe - first one right ? The marinate used in the fish reminds of Moroccan's chermoula. You always come up with creative ways of preparing dishes.

Refika and team! You are almost at 300,000. Almost there 🙏. Super happy for you. I will definitely make this dish on Monday. I’ve prepared a few other of your dishes. I’m lucky because I live near Berlin and can find most of the ingredients for several of your other dishes. This is my first time to cook Turkish food but not my first time to eat it. The best food most flavorful and delicious (for me). I’ve recommended your channel to Turkish friends (beautiful family) and the 16 year old is cooking sooo much.
