When I was a kid my dad, who grew up in the depression, would tear off pieces of mold from bread and force us to eat it while telling us that when we were grown and bought our own food we could do what we want. Well, I am grown now (have been for decades) and when I see mold on the bread the whole loaf goes into the garbage. @Diamond C is correct about not all of it being visible. Nice recipe, but she lost me with the moldy bread.

This is one of the most widespread myths about fungi I know. The mold in the bread is almost 100% of the time restricted to the spots you can see. Fungi associated with mold have a fast frutification time. Once it starts growing it already changes color so you see it right away. There is no mycelium growing unnoticed inside the bread because the bread is porous. Therefore, the fungi would frutify inside the air bubbles as well, and you would see dark spots inside the loaf if there was fungi in there. Should you eat vegetables with mold? No, because the toxins can spread through the water inside the vegetables. This doesn't happen with the bread. However, you would still know where there is fungi mycelium because, as the fungi grows, it produces enzymes that digest the vegetables. So it gets soft and changes color and smell. So yea, definitely there is no way you have unnoticed fungi growing in your food. Unless you can't see, smell, taste and touch.

Ya stale bread not moldy. 2 different things. Stale is bread that has no moisture or lost a lot, it’s dry. Moldy bread can be moist still. You want stale bread if possible because it doesn’t fall apart so easily when it soaks up all the liquid. As a pastry chef I’ve seen moist, moldy bread. At one of my old jobs we hired a new girl to package all the bread products. Made a few thousand loaves of bread by hand every night.. She sliced some loaves that were still pretty warm, bagged them and sealed them up. Two days later the bread was brought back. The bag was super moist inside so was the bread from the steam but it was moldy. So stale and moldy are two different things.

Typically when the mold is showing on the bread it's already very bad so I'd personally pass on this for that reason but her mixture looks good. I don't use so much sugar but each persons taste is different so i cant knock it. Love the coffee creamer idea, need to try that. I use bread that's a few days old...so not fresh but I'm definitely not messing with it if mold or anything like that is on it.

If you are making French toast or Bread pudding you want to use bread that is DEFINITELY NOT FRESH! Like her I just remove the mold if it has a spot or two. Any more than that you feed it to the birds or the ants. That toast looked very delicious except a little too much sugar in it.
